First a little tutorial about flax seeds… Flax is a super seed grown mostly in Canada, North Dakota and South Dakota. Minnesota and Wisconsin also produce flax.

Canada is the leading producer of brown flax seed and the Dakota’s tend to produce more of the golden flax. There is little difference in the two colors but many prefer the gold because it is easier to sneak into recipes, the brown is more visible in those muffins! Potlucks are great anytime of the year, but they tend to be more popular this time of year as we have more gatherings with friends and family for the holidays and football games. Potlucks are popular because not only is it a lot less work for the host, but it provides a wide variety of foods for everyone to try! In my family, potlucks are a must. I have a large family, so large in fact that we have to rent out a community room or an external space to host our family gatherings because we don’t fit in our own houses anymore! But, no matter where we spend our holidays, food is always at the top of mind.

Weekly Ad: Mini Yogurt Parfaits

These grab-n-go Mini Yogurt Parfaits are too good to resist. With a delicious homemade graham cracker crust, your favorite yogurt flavor, plus a delicious topping of your choice we promise you won’t be able to eat just one!

Although these treats can make a perfect handout at a holiday party, you can also freeze these tasty treats and place them in Ziploc Freezer bags until you’re ready to eat them! Your friends and coworkers will be jealous when they see you snacking on these beautiful Mini Yogurt Parfaits!

Mini Yogurt Parfaits
 
Ingredients
  • Graham Cracker Crust
  • 1½ Cups Graham Crackers, crushed
  • ⅓ Cup Sugar
  • 6 T. Butter, melted
  • ½ tsp. Cinnamon
  • Yogurt cups, your choice of flavors
  • Toppings: Examples: Berries, banana slices, mint leaves, chocolates, etc.
Instructions
  1. Mix graham cracker crumbs, sugar, melted butter and cinnamon until well blended.
  2. Place mixture in muffin tin or mini-muffin tin liners.
  3. Using a spoon, add yogurt to each cup until they are about ¾ of the way full.
  4. Add fresh berries, mint leaves, candies, chocolates or other combinations to decorate your parfaits.
  5. Freeze your cups until yogurt is firm (about 1-2 hours.)
