Spring is officially behind us and Summer is in full swing! We have another week filled with some great Summertime meal ideas for you and your family to enjoy!

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. Meal #1 – Chicken With Vegetables & Strawberry Angel Food Dessert


Chicken & Vegetables
 
Ingredients
  • Boneless, Skinless Chicken
  • Red Potatoes
  • Frozen Vegetables, mixed
  • Olive Oil
  • Seasonings
Instructions
  1. Cut chicken tenders in thirds.
  2. Scrub red potatoes. Leaving peel on, chop potatoes into 1 inch pieces.
  3. In large bowl combine chicken, potatoes and bag of frozen vegetable.
  4. Drizzle olive oil and spices of your liking over mixture.
To bake:
  1. Place mixture in greased pan.
  2. Bake at 350°F until chicken reaches internal temperature of 165°F and potatoes are soft when fork is inserted.
To grill:
  1. Place mixture in foil. Secure foil tight around edges.
  2. Grill until chicken reaches internal temperature of 165°F and potatoes are soft when fork is inserted.

Ingredients
  • 1 Pkg. Mini Beef Meatballs
  • 1 Bag Tortilla Chips
  • 1 Cup Shredded Cheese
Instructions
  1. Preheat oven to 325°F. Spread tortilla chips in an even layer on a baking sheet.
  2. Distribute frozen meatballs on top of tortilla chips. Sprinkle shredded cheese on top of chips and meatballs.
  3. Bake in oven until the meatballs are thoroughly heated and the cheese is melted, approximately 10 to 15 minutes.
  4. Optional toppings: diced fresh tomatoes, salsa, guacamole, sour cream, jalapeños, black olives, refried beans, nacho cheese sauce.

Meal #4 – Chicken Tenders, Coleslaw & Fresh Honeydew


Oven Fried Chicken Tenders
 
Ingredients
  • ¼ Cup All-Purpose Flour
  • 1 Egg
  • 1 Tbsp Water
  • 5 Oz. Seasoned Croutons, crushed
  • ½ Cup Grated Parmesan Cheese
  • 1⅓ Lb. Chicken Breast Tenders
  • Favorite Dipping Sauce, if desired
Instructions
  1. Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.
  2. In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix crushed croutons and cheese.
  3. Coat chicken with flour; dip into egg mixture, then coat with crouton crumb mixture. Place on cookie sheet.
  4. Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown.
  5. Serve with dipping sauce.

Instructions

Chopped Buffalo Chicken Salad
 
Ingredients
  • Boneless, Skinless Chicken, cooked with Buffalo Seasoings
  • Lettuce
  • Blue Cheese Dressing
Instructions
  1. Bake chicken according to package directions.
  2. Mix all greens; break chicken up and toss with salad.
  3. Drizzle dressing over top and serve while chicken is warm!
Optional:
  1. Add additional zip with crumbled blue cheese on top of salad.

Instructions
