Hi Everybody!

One of my favorite things when looking through recipes or cookbooks are entrees that take less than 30 minutes to make and serve. When I found one I’m all over it. Well I found one the other day that peaked my interest and when I made it the recipe was not only a WOW but is now on my list for top favorites especially if you love sundried tomatoes and basil pesto which I personally love to devour. So here is a great 30-minute meal that you and your family can enjoy and it’s great for those weeknight meals when you don’t have a lot of time.

Ingredients
  • 1 Lb. Bonesless Skinless Chicken Breasts, sliced and seasoned
  • 1 T. Olive Oil
  • 2 T. Fresh Basil, chopped
  • 1 Clove Garlic, chopped
  • 1 Package Knorr® Rice Sides - Creamy Chicken
  • ½ Cup Mozzarella, shredded
  • 2 Large Tomatoes, chopped
Instructions
  1. Heat oil in skillet and cook chicken thoroughly, 4 minutes; adding garlic during last 30 seconds.
  2. Remove from skillet, set aside.
  3. Empty package contents into same skillet and prepare rice according to package directions.
  4. Stir in cooked chicken, garlic and tomatoes.
  5. Sprinkle with mozzarella and basil.

Ingredients
  • 1 pkg. Simek's Mini Turkey Meatballs
  • ½ Cup Frank’s Red Hot Sauce
  • ¼ Cup Onions, chopped
  • 4 Celery Stalks, chopped
  • 3 Oz. Crumbled Blue Cheese
  • 12 Iceberg lettuce leafs (Romaine and Boston/Bibb lettuce are also good options)
  • 1 Cup Shredded Carrots
Instructions
  1. Cook Simek’s Mini Turkey Meatballs and chopped onions on stovetop until warmed all the way through.
  2. Add a ½ cup of Frank’s Red Hot Sauce and stir until mini meatballs are coated.
  3. Prepare lettuce leafs and place heated meatballs and onions in center of each leaf, followed with crumbled blue cheese, shredded carrots, and chopped celery as garnishes.

Ingredients
  • 1 Pkg. Simek's Mini Beef Meatballs
  • 6 Slices White Bread
  • 6 Slices American cheese
  • 1 T. Butter, melted
Instructions
  1. Heat Simek’s Turkey Mini Meatballs in a pan until warmed all the way through.
  2. Cut crusts off of bread and roll with rolling-pin to flatten bread.
  3. Place 1 slice of American cheese on each piece of flattened bread, followed by 4 mini meatballs aligned in center.
  4. Roll sides of bread to center to create rollup.
  5. In frying pan place 1 tablespoon of butter and once melted add rollup.
  6. Heat for 5-10 minutes and turn regularly to brown all sides.

  • 1 Bag Frozen Tortellini
  • 4 Cups Chicken Broth
  • 2 Can Italian Diced Tomatoes
  • 1 Block Cream Cheese
  • 3 Cups Baby Spinach
  • Parmesan Cheese Garnish (optional)
Instructions
  1. In a large crock-pot combine meatballs, tortellini, chicken broth, diced tomatoes, cream cheese, and baby spinach.
  2. Cover and set on low for 5 hours, stirring occasionally.

Weekly Ad Recipe – Grilled Lemon-Herb Steaks

I had my husband grill this steak for us last night and it was wonderful.   I just love the extra flavor of lemon in this steak along with the sage and oregano flavors.   They paired very well.   Serve a side salad with this steak and you have a wonderful summer meal in the back yard.  Enjoy….I did!

Grilled Lemon-Herb Steaks
Serves: 4
 
Ingredients
  • ⅓ Cup Vegetable Oil
  • ½ tsp. Lemon Peel, grated
  • 2 T. Lemon Juice
  • 1 T. Dry White Wine
  • ¼ tsp. Dried Sage Leaves, crumbled
  • ¼ tsp. Dried Oregano Leaves
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 4 Boneless Beef Top Sirloin Steaks
Instructions
  1. Mix all ingredients except beef steaks in shallow glass dish.
  2. Add beef; turn to coat with marinade.
  3. Cover and refrigerate at least 4 hours, turning beef occasionally.
  4. Heat coals or gas grill for direct heat.
  5. Remove beef from marinade; discard marinade.
  6. Cover and grill beef 4 to 5 inches from medium heat 12 to 16 minutes with internal temperature reaching at least 145°F., turning once.
