Spring is here and this is the perfect salad for those spring or summer events. This is so easy to make and so refreshing with the orange juice mixed with the yogurt. The best part is I don’t have to choose which berry to add to this salad because I can have them all. Enjoy…I did!

Berry Mango Salad
Serves: 4
 
Ingredients
Dressing
  • ⅓ Cup Vanilla Yogurt
  • 1 T. Orange Juice Concentrate
  • 1 tsp. Honey
Salad
  • 6 Cups Chopped Mixed Salad Greens
  • 1 Cup Sliced Strawberries, Blackberries or Raspberries
  • 1 Mango peeled, pitted and cut into cubes
Instructions
  1. Mix all dressing ingredients together.
  2. In large bowl, toss all salad ingredients; serve with dressing.

The more recipes with turkey I try, the more I like it. These burgers are awesome on the grill. I love the flavor of the Parmesan cheese with the hint of chives. This is a quick and easy recipe to put together for those backyard barbecues. Enjoy…I did!

Parmesan Turkey Burgers
Serves: 4
 
Ingredients
  • 1 Lb. Ground turkey
  • ⅓ Cup Grated Parmesan Cheese
  • 1 tsp. Dried Chives
  • ¼ tsp. Pepper
  • ⅛ tsp. Salt
  • 4 Hamburger Buns, split
  • Red Onion Rings, optional
Instructions
  1. Heat gas or charcoal grill.
  2. In medium bowl mix all ingredients except buns and onions.
  3. Shape mixture into 4 patties, about ½” thick.
  4. Carefully brush vegetable oil on grill rack.
  5. Place patties on grill rack over medium heat.
  6. Cover grill; cook patties 12 to 15 minutes, turning once and until the turkey reaches an internal temperature of 165 degrees.
  7. Add buns, cut sides down, to side of grill for last 4 minutes of grilling.
  8. Serve patties on buns with grilled or raw onion rings.
