Potlucks are great anytime of the year, but they tend to be more popular this time of year as we have more gatherings with friends and family for the holidays and football games. Potlucks are popular because not only is it a lot less work for the host, but it provides a wide variety of foods for everyone to try! In my family, potlucks are a must. I have a large family, so large in fact that we have to rent out a community room or an external space to host our family gatherings because we don’t fit in our own houses anymore! But, no matter where we spend our holidays, food is always at the top of mind.

DAY ONE: 

Street Tacos with Avocado

We will start the week off strong with these super tasty Carne Street Tacos. From the tender juicy steak to the tangy lime and spicy jalapeño, these tacos have a combination of flavors that are sure to satisfy your whole family!

Ingredients
  • Certified Boneless Hereford Beef New York Strip Steak
  • 2 Corn Tortillas
  • 2 Limes
  • 1 Orange
  • ¼ Cup Olive Oil
  • 5-6 Garlic Cloves, minced
  • ½ Jalapeño, finely chopped with vine and seeds removed
  • 1 tsp. Cumin
  • ½ tsp. Chile Powder
  • ½ tsp. Oregano
  • ½ tsp. Salt
  • Black Pepper, to taste
  • ¾ Cup Fresh Cilantro
  • 1 Avocado, sliced
Instructions
  1. Combine marinade ingredients in small bowl and mix well.
  2. Put steak and marinade in zip lock bag and let steak marinate for a few hours.
  3. Remove steak from marinade. Grill steak to desired doneness.
  4. Remove from grill and let steak rest a bit, then slice against grain into thin strips.
  5. Fill warmed corn tortillas with some steak, top with additional cilantro and a squeeze of lime.

Tomato Avocado Mozzarella Salad

We all know how delicious meat is, but what about fresh and delicious veggies and cheese? This fresh salad is a meal on its own but is made even better with some fresh baked buttery Rhode’s Rolls.

Tomato Avocado Mozzarella Salad
 
Ingredients
  • SALAD
  • 4 Cups Cherry Tomatoes, halved
  • 2 Avocados, diced
  • 8 Oz. Shredded Mozzarella Cheese
  • ½ Cup Fresh Basil, chopped
  • DRESSING
  • ¼ Cup Olive Oil
  • ¼ Cup Balsamic Vinegar
  • 3 T. Honey, warmed
  • Salt, to taste
Instructions
  1. In a large bowl, combine all salad ingredients, except Mozzarella cheese balls.
  2. In a small bowl, combine all dressing ingredients: whisk olive oil, balsamic vinegar and honey until nice and smooth.
  3. Add the salad dressing to the large bowl with salad, sprinkle with a small amount of salt, and toss to combine.
  4. Taste and season with more salt, if needed.
  5. Add shredded mozzarella when ready to eat.
  6. Enjoy!

DAY THREE: 

Oven Fried Honey-Garlic Chicken

Is there honestly anything better than hot, crispy fried chicken? This recipe is made healthier by “frying” it in the oven and adding some tasty broccoli.

Oven Fried Honey Garlic Chicken
 
Ingredients
  • 2 Broccoli Heads, washed, dried and cut into florets
  • 2 T. Olive Oil
  • 1 tsp. Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Gold n’ Plump 8 Piece Chicken, diced
  • ½ Cup Flour
  • 1 Egg
  • 2 T. Milk
  • 3 T. Honey
  • 1 tsp. Garlic Powder
  • 1 tsp. Paparika
  • 1¾ Cups Bread Crumbs
  • ⅓ Cup Vegetable Oil
Instructions
  1. Preheat oven to 390°F. Line a baking sheet with baking / parchment paper or spray a nonstick tray with cooking oil spray; set aside.
  2. Add the broccoli to a bowl with the oil, garlic, salt and pepper, mix to combine.
  3. Set aside.
  4. Season chicken with salt and pepper.
  5. In a small bowl, add the flour and set aside.
  6. In a second bowl, whisk together eggs, milk, garlic powder and the ¾ teaspoon of salt and paprika.
  7. In the third bowl, mix the bread crumbs with the vegetable oil.
  8. One by one, evenly coat the chicken in the flour, then dip into the egg mixture, then dredge in the bread crumb mixture, pressing to coat.
  9. Place onto prepared baking sheet and repeat with remaining chicken thighs.
  10. Lightly spray each chicken thigh over the top with cooking oil spray.
  11. Bake for 25 minutes, remove from the oven and arrange the broccoli next to or around the chicken, and place back into the oven to cook for a further 20 minutes, or until the chicken is cooked through; the crust is crispy and golden brown, and the broccoli is tender-crisp.
  12. While the chicken is in the oven, prepare the Honey Garlic Sauce:
  13. In a small saucepan, combine honey soy sauce and garlic.
  14. Bring to a simmer over medium heat, and quickly reduce heat to low.
  15. Pour the prepared cornstarch mixture into the saucepan and stir through until sauce thickens.
  16. Set aside and allow to cool.
  17. Garnish chicken with parsley and serve immediately with the honey garlic sauce.

Lemon Garlic Pasta

Lemon Garlic Pasta
 
Ingredients
  • 1 Head of Garlic
  • ¼ Olive Oil
  • 4-5 T. Fresh Lemon Juice - 1 Large Lemon
  • Lemon Zest
  • Salt, to taste
  • ⅛ tsp. Red Pepper Flakes
  • Food Club Angel Hair Pasta, cooked to al dente
  • Food Club Grated Parmesan Cheese
Instructions
  1. Place peeled garlic cloves in an oven safe dish, drizzle with olive oil and cover with foil.
  2. Oven roast at 400° for 30-40 minutes (until lightly golden browned).
  3. Let cool for 2-3 minutes, then chop.
  4. Cook pasta according to package directions.
  5. Feel free to use a different type of pasta if you prefer.
  6. In a large sauté pan over medium/low heat - heat the olive oil and chopped garlic for 4-5 minutes while stirring.
  7. Add the lemon juice and continue cooking for 2-3 minutes.
  8. Reduce heat to low and add the salt and red pepper flakes.
  9. Add the cooked pasta and toss with the lemon garlic sauce until fully coated.
  10. Transfer to serving dishes and top with a drizzle of olive oil, lemon zest, fresh grated parmesan cheese and red pepper flakes.

Ingredients
  • 2 Packages Plain Bagels, sliced in half
  • ½ Cup Marinara Sauce
  • 1 Cup Chicken, chopped
  • 1 Cup Shredded Mozzarella Cheese
Instructions
  1. Preheat broiler.
  2. Place bagel halves, cut sides up, on a baking sheet.
  3. Broil 2 minutes or until lightly toasted.
  4. Spread 2 T. marinara on cut side of each bagel half.
  5. Top each half with ¼ cup chicken, and sprinkle with ¼ cup cheese.
  6. Broil bagel halves an additional 2 minutes or until cheese melts.

Grilled cheese and tomato soup: probably one of the most popular meals of our childhood. This recipe takes it a step further and jazzes up this classic combo.

BLT Grilled Cheese
 
Ingredients
  • 8 Slices Bread
  • 8 Slices Cheddar Cheese
  • 8 Slices Cooked Bacon
  • 1 Tomato
  • 4 T. Butter
  • 2 Cans of Tomato Soup
Instructions
  1. Spread butter on one side of each slice of bread, then stack buttered sides together.
  2. Layer 2 slices cheddar on top of bread stack, then bacon slices, then tomato and finally the remaining slices of cheese.
  3. Place bread buttered side down in a fry pan over medium-high heat.
  4. Cover with lid and let cook for 3-4 minutes or until golden.
  5. Reduce heat to medium and flip sandwich to other side and cook for 2-3 minutes or until bread is toasty golden and cheese has melted.
  6. The second side will cook faster than the first so watch carefully.
  7. Cut in half and enjoy with tomato soup!

Ingredients
  • 2 tsp. Oil
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1 Lb. Lean Ground Beef
  • ¾ Lb. Beef Sirloin, cubed
  • 14 Oz. Can Diced Tomatoes
  • 1 Can Dark Beer
  • 1 Cup Strong Coffee
  • 12 Oz. Can Tomato Paste
  • 1 Can Beef Broth
  • ½ Cup Brown Sugar
  • 3½ Tbsp Chili Sauce
  • 1 Tbsp Cumin
  • 1 Tbsp Cocoa
  • 1 tsp. Oregano
  • 1 tsp. Cayenne
  • 1 tsp. Coriander
  • 1 tsp. Salt
  • 4 Cans (15 Oz.) Kidney Beans
  • 4 Chili Peppers, chopped
Instructions
  1. Heat oil.
  2. Cook onions, garlic and meat until browned.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add brown sugar, spices, 2 cans of kidney beans and peppers; mix well.
  5. Reduce heat and simmer for 1½ hours.
  6. Add remaining 2 cans of kidney beans and simmer for another 30 minutes.

These Holiday Spice Ornaments make a perfect last minute gift or festive addition to a miniature Christmas tree used to decorate for a holiday party. I personally made these Ornaments with the intention of hanging each of them from a small Christmas tree in my home. I have it all planned out. I am going to be ordering a Meat and Cheese platter, Hye Roller Tray and a Fresh Fruit and Vegetable Platter from Coborn’s. I’ll also be sure to pick up some of my favorite wine from Coborn’s Liquor. After fun times, lots of laughs and a gift exchange I will let each of my guests pick an ornament off of the tree as a parting gift.

This crafty creation is incredibly easy to make. Simply follow the directions below and gather all of your ingredients to make the Ranch Dressing Mix. Your last minute creative gift planning just got a whole lot easier… And even more tasty!

  • Measuring Spoons

  • Ranch Dressing Mix
  • ⅓ Cup Dry Buttermilk
  • 2 T. Dried Parsley
  • 11/2 tsp. Dried Dill Weed
  • 2 tsp. Garlic Powder
  • 2 tsp. Onion Powder
  • 2 tsp. Dried Onion Flakes
  • 1 tsp. Ground Black Pepper
  • 1 tsp. Dried Chives
  • 1 tsp. Salt
Instructions
  1. Put all ingredients into bowl and mix.
  2. Put 3 Tablespoons into each bulb. This recipe makes 2 bulbs.
  3. Print the printable provided.
  4. Cut and use 2 way tape and put on ornament.
  5. Cut Cute String attach to ornament and put on tree.
  6. Tablespoons of this mix equals 1 packet of the store bought seasoning mix.
  7. To make Ranch Dressing combine 1 Tablespoon of seasoning mix with ⅓ cup mayo or ⅓ cup Greek yogurt and ⅓ cup milk.
  8. Store in refrigerator for up to 3 months.

Does it ever seem like you have tomatoes coming out of your ears? Each fall, my family pulls in the last of the half-green tomatoes and sets them on the front porch to finish ripening. It never seems like much, until pail after pail is unloaded and eventually we realize we overplanted once again.

Typically, this means we have a wonderful salsa-making session in store, along with making a bunch of spaghetti sauce. The whole family gets involved in the tomato prep process, and it’s great to involve even itsy bitsy children. Our little guy has the very important job of making sure the tomatoes are clean. We give him a couple of big bowls of water, a wooden spoon and some towels. He sticks some tomatoes into one water bowl, dunks them with the spoon, and then transfers them to the next bowl of water to rinse, dunking them again with the spoon before moving them to the towels. We found that one of our twins is naturally persnickety, which makes her a perfect tomato skin peeler. HerSalsa-Chefs twin sister loves getting messy. Her job is to take the skinned tomato, shove her thumbs up inside the walls of it, and scrape the seeds down into the sink.

Last year, our autumn got away from us, so I simply washed those tomatoes, stuck them in zippered freezer bags, and froze them until we had a free weekend later in the year. Sure enough, as they thawed, the skins slid right off, saving us a step of having to par-boil in order to remove the bitter skins.

A few years ago, our neighbors were trading jars of salsa, everyone sampling the others and enjoying the variety of flavors. We discovered that our next door neighbors’ salsa tasted remarkably similar to ours. A comparison of “family” recipes revealed that our recipes were nearly identical – the only difference was that ours included carrots! We all had a good laugh over that and both adjusted our recipe cards to say “Neighborhood Salsa.”

This year, we’re freezing a bunch of tomatoes again for salsas and sauces, but not before pulling out a handful of the reddest cherry tomatoes out for my favorite lunch dish: Tabouli. This fresh meal originates from Lebanon and is very healthy and delicious (it’s sometimes spelled Tabbouleh). It’s full of parsley, tomatoes, onion, herbs, lemon, quinoa and bulgur wheat, which is a rich source of protein, fiber and minerals, and yet is low in calories and fat. I like to serve it in pitas and while it may look pretty earthy, even my meat-loving family enjoys it.

Below are the recipes for my favorite Neighborhood Salsa and Tabouli. Enjoy!

Neighborhood Salsa
 
Ingredients
  • ⅓ Cup Sugar
  • 8 Cups Tomatoes, peeled and seeded
  • 2½ Cups Onions, chopped
  • 1½ Cups Green Pepper, chopped
  • 1 Cup Jalapeño, diced
  • 6 Cloves of Garlic, minced
  • 2 tsp. Cumin
  • 2 tsp. Ground Pepper
  • ⅛ Cup Canning Salt
  • ⅓ Cup White Vinegar
  • 15 Oz. Can Tomato Sauce
  • 12 Oz. Can Tomato Paste
  • 1 Cup Carrots, shredded (if you need to mellow out the heat of the Jalapeños)
Instructions
  1. Combine all ingredients and bring to a slow boil for 10 minutes.
  2. Taste test. If it’s too hot, add a half cup of shredded carrots and let cook for another 10 minutes.
  3. Taste test again. If it’s still too hot, add another half cup of carrots and look for 10 more minutes.
  4. Seal in jars and cook in a hot bath for 10 minutes. (I follow the Ball canning instructions exactly for food safety.)
Notes
Tomato skins and seeds both are bitter, so you can get rid of them.

Ingredients
  • 2 Cups Prepared Quinoa/Bulgur Blend (Full Circle brand in the Natural Foods department)
  • 1 Pinch Salt
  • ¼ Cup Olive or Grape Seed Oil
  • ½ tsp. Pepper
  • ¼ Cup Lemon Juice
  • 3 Medium Tomatoes, diced
  • 2 Bunches Green Onions, diced
  • 1 Bunch Fresh Parsley, destemmed and chopped coarsely
  • 2 tsp. Fresh Mint, chopped finely
Instructions
  1. Combine all ingredients and cover tightly.
  2. Let the mixture marinate in the refrigerator for a couple days.
  3. Serve in pita pockets, in lettuce wraps, or on crackers.
Notes
• Invite others to help with plucking the parsley off the stems. The stems are bitter. It’s a tedious process, but the kids are great helpers and it’s an easy way for them to use their fine motor skills.
• Some chefs mince the parsley up very finely, but we prefer ours a little heartier. It stays fluffier – more like a salad and less like a dip.
• If your tabouli is not flavorful enough, add more salt and more lemon juice. My family prefers the recipe as listed above, but I always set aside some for myself and then I sprinkle a lot more lemon juice over the top of it.
