Weekly Ad Recipe – Mahi Mahi With Salsa

Mahi Mahi is one of my absolute favorite fish and this recipe is so easy to make. Adding salsa and fresh basil over the top of the fish makes it burst with flavor. Enjoy… I did!

Mahi Mahi With Salsa
Serves: 4
 
Ingredients
  • 4, 4 Oz. Filets Of Mahi Mahi
  • 2 tsp. Olive Oil
  • ¼ tsp. Salt
Salsa
  • 1 Cup Diced Tomato
  • 2 T. Diced Shallot
  • 2 Cloves Garlic, finely chopped
  • 2 T. Lemon Juice
Garnish
  • ¼ Cup Shredded Fresh Basil Leaves
Instructions
  1. Heat oven to 425 degrees.
  2. In a medium bowl, mix salsa ingredients together; set aside.
  3. Rub fish with 1-teaspoon oil, and ¼-tsp. of salt; set aside.
  4. In 10-inch skillet, heat remaining 1 teaspoon oil over medium-high heat.
  5. Sear fish 4 to 5 minutes, or until it releases easily from the pan.
  6. Turn; cook 4 to 5 minutes on other side until internal temperature of fish reaches at least 145 degrees.
  7. Top each piece of fish with salsa and basil and serve.

This is one of the best pork roasts I have ever served! The pork was tender and juicy. Then add the Four Brothers Montreal Steak Seasoning and you have outstanding flavor. Enjoy…I did!

Seasoned Standing Pork Rib Roast
Serves: 8
 
Ingredients
  • One Standing Pork Rib Roast
  • Olive Oil
  • Four Brothers Montreal Steak Seasoning
Instructions
  1. Preheat oven to 450 degrees.
  2. In a roasting pan place rack fat side up.
  3. Apply liberal amount of olive oil, rubbing it into the meat.
  4. Sprinkle with Four Brothers Montreal Steak Seasoning.
  5. Place pan in preheated oven for 15 minutes.
  6. After 15 minutes reduce heat to 325 and continue to roast for 1.5 to 2 hours or until internal temperature has reached 145 degrees.
  7. Remove the rack from the oven placing on a cutting board and allow to rest for 15 minutes before slicing the meat.
  8. This will allow all the juices to remain in the rack, rather than have them run out making the meat dry.
  9. Cut the rack along the bones, making even portions of the pork, and serve with your favorite sides.

This is a perfect recipe for holiday appetizers and they are AWESOME!! You can make this recipe up ahead of time with just a few ingredients. When I entertain I love to serve appetizers and this one will always be on my list. Enjoy!!!

Italian Marinated Shrimp
Serves: 10
 
Ingredients
  • ¼ Cup Fresh Basil Leaves, chopped
  • 2 Cloves Garlic, finely chopped
  • 2 tsp. Fresh Lemon Peel, grated
  • ¼ tsp. Salt
  • ⅓ Cup Olive Oil
  • 3 T. Red Wine Vinegar
  • 1 Lb. Cooked, deveined, peeled shrimp
Instructions
  1. In medium bowl, mix all ingredients together.
  2. Cover and refrigerate for at least 2 hours but no longer than 24 hours to marinate.
  3. Just before serving, stir shrimp.
  4. Drain and serve.

Homemade Sugar Scrub

Ingredients
  • ½ Cup Raw Sugar
  • ½ Cup Olive Oil
  • 2-4 Drops Essentials Oil of your choice. (I used a lavender variety!)
  • Jar with a screwable top. (I picked a mason jar!)
Instructions
  1. Measure out and pour Raw Sugar into the container.
  2. Add Olive Oil and Essential Oil.
  3. Replace cover and shake mixture.
  4. Scrub skin with mixture to exfoliate and rinse.
