Weekly Ad Recipe – Slow-Cooked Swiss Steak

This is another very easy recipe that you can throw together before you leave in the morning that will be ready to go by the time you get home. The meat and vegetables are so tender and the gravy is stupendous. Enjoy….I did!

Slow-Cooked Swiss Steak
Serves: 4
  • 2 tsp. Vegetable Oil
  • 1½ Lb. Boneless Beef Top Round Steak
  • 1 tsp. Salt
  • ¼ tsp. Pepper
  • 1 Medium Onion, thinly sliced
  • 1 Medium Carrot, shredded
  • 4 Oz. Can Mushroom Pieces and Stems, drained
  • 10.75 Oz. Cream Of Mushroom Soup
  • 8 Oz. Can Tomato Sauce
  1. In 10-inch skillet, heat oil over medium-high heat.
  2. Sprinkle beef with salt and pepper; place in skillet.
  3. Cook 4 to 6 minutes, turning once until browned.
  4. Meanwhile spray 4 quart slow cooker with cooking spray.
  5. In cooker, mix onion, carrot and mushrooms.
  6. Cut browned beef into 4 pieces; place in cooker over vegetables.
  7. In same skillet, mix soup and tomato sauce.
  8. Pour over beef.
  9. Cover; cook on low heat setting 8 to 10 hours.
  10. Stir sauce well before serving over beef.

If you like an Italian blend of spices like myself, this is the roast for you! The tomato mixture combined with fresh garlic and tomatoes was fantastic! This was such an easy recipe to throw together before I left for work in the morning. Plus, it was awesome to come home and have dinner already done. Enjoy….I did!

Italian Style Beef Roast
Serves: 8
  • ½ Cup Onion, chopped
  • 14.5 Oz. Can Diced Tomatoes, undrained
  • 3 Lbs. Boneless Beef Rump Roast
  • 2 Slices Bacon, chopped
  • 1 Clove Garlic, finely chopped
  • 1 T. Italian Seasoning
  • 3 T. Cornstarch
  • ¼ Cup Water
  • 8 Oz. Whole Fresh Mushrooms
  1. In 5 quart slow cooker, mix onion and tomatoes.
  2. Place beef in slow cooker.
  3. In small bowl, mix bacon, garlic and Italian seasoning; rub over beef.
  4. Cover; cook on low heat setting 8 to 10 hours.
  5. Remove beef from cooker.
  6. In small bowl, mix cornstarch and water; stir into tomato mixture.
  7. Return beef to cooker.
  8. Cut large mushrooms in half and arrange around beef.
  9. Increase heat setting to high.
  10. Cover; cook 20 to 30 minutes until tomato mixture has thickened and beef has reached an internal temperature of 135 degrees.

This is the perfect recipe if you are looking for a great side dish for those summer parties. It usually take 5 minutes to put together and then in about 50 minutes it is ready for you to sample. Enjoy….I did!

Cauliflower & Mushrooms
Serves: 4
  • 3 Cups Cauliflowerets
  • 1 Cup Chopped Fresh Mushrooms
  • ½ Cup Chopped Red Onion
  • 1 T. Olive Oil
  • 2 tsp. Lemon Juice
  • 2 tsp. Cider Vinegar
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 2 Garlic Cloves, finely chopped
  • ⅓ Cup Chopped Green Onions
  1. Heat oven to 350 degrees.
  2. Spray square baking dish, 9x9x2 inches, with cooking spray.
  3. Mix all ingredients except green onions.
  4. Spread evenly in baking dish.
  5. Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown.
  6. Sprinkle with green onions.

Here is a recipe that you can use a couple different ways. I have served this as an appetizer at a party and I have also made this recipe and served the mushrooms over pasta. It’s perfect if you are looking for meatless meal options. Also, if you don’t have fresh parsley a teaspoon of dried parsley works just as good. You can also add some lite sour cream to top it off. Enjoy….I did!

Creamed Style Mushrooms
Serves: 6
  • 2 Lbs. Whole White Mushrooms
  • 3 T. Butter or Margarine, melted
  • 3 T. Half and Half
  • 1 Clove Garlic, finely chopped
  • 1 Env. Beefy Mushroom Soup Mix (1.15 oz.)
  • ¼ Cup Sour Cream
  • 2 T. Chopped Fresh Parsley
  1. Place mushrooms into a 3-quart slow cooker.
  2. Mix melted butter with half and half, garlic and soup mix in a small bowl.
  3. Stir soup mixture gently into mushrooms to coat.
  4. Cover and cook on high heat setting 2 to 3 hours or until mushrooms are tender and hot.
  5. Gently stir sour cream into mushrooms.
  6. Sprinkle with parsley before serving.
