Keeping Comfort Food Light

When the weather gets cold, there’s nothing we Minnesotans love more than some good, old-fashioned comfort food. However, when the weather gets warm again, there’s nothing we Minnesotans regret more than all that comfort food we ate while it was cold! Before you give in to some of your staples, try out these lighter recipes and see how they compare.

Steak & Potatoes:  Despite being one of the quintessential American meals, a traditional recipe can leave you feeling heavy and full. This recipe has half the calories, but we’re not even sure where they went! The steak is delicious, the potatoes are creamy, and we highly recommend the creamed spinach to go with it.

Macaroni & Cheese: This is one of those dishes that pulls at your heart strings for how much it reminds you of childhood. At the same time, it elevates mac & cheese to a new, and very improved level. Not only is this homemade, creamy, and delicious, but it’s much healthier than the infamous blue box. Of course, the bacon is the part that makes it completely irresistible. The whole family will be begging for more!

Chicken Pot Pie: Just thinking about a chicken pot pie makes my mouth water. Is there any bite as savory as a bite of crunchy, flaky crust combined with the creamy, hot filling of a pot pie? This recipe will remind you just how delicious this classic meal is. Not only is it yummy, but using pastry strips instead of a full crust makes this recipe quick and easy as well. Because of its ease and its rich flavors, this will become a staple in your family’s cold-weather repertoire.

Before you succumb to the extra layer to keep yourself warm over the winter, give these recipes a try to save on the calories without skimping on taste. Add the ingredients to your shopping list for your next trip to Coborn’s or your next CobornsDelivers order, and let us know what you think!

How to Store Cheese

First – how are you storing the cheese you just bought? You want to make sure it keeps its freshness and flavor as long as possible. These tips for storing cheese will keep your fromage super fresh.

  • The best place for cheese is in your refrigerator’s vegetable crisper.
