Jayne's Favorite Things!

The Holidays are here and it’s time to entertain! So for this month’s blog I have decided to introduce you to “Jayne’s Favorite Things”. When I say they are my favorite I really do mean it, not only for the taste but also for the convenience. These are some great items to serve when you are entertaining during the holidays.

I thought I should start with a couple appetizers. My first favorite is Simek’s Meatballs. These meatballs are so convenient especially when you do not have time to make homemade. You can find them in the frozen area of the Meat Department. I also have to mention that Simek’s has a “new” mini size meatball and these are awesome when making homemade pizza or for egg bakes when you have to prepare breakfast for your family on Christmas Day. These meatballs are so easy to prepare, just toss into a slow cooker and add my 2nd favorite item which is Ol’ West Barbecue Sauce. Once you have tried this sauce I doubt if you will ever try any others. You can find the BBQ Sauce in the condiment aisle in the Grocery Department. I also have one of my favorite dips that I make using Ol’ West BBQ Sauce and I also use our Rotisserie Chicken from the Deli Department. Make this dip and you will be the hit of the party and trust me there will be no leftovers. Don’t forget to serve with Nabisco’s “new” Triscuit Balsamic Vinegar & Basil.

BBQ Chicken Spread
 
Ingredients
  • 8 Oz. Cream Cheese
  • 8 Oz. Sour Cream
  • Rotisserie Chicken, shredded
  • 8 Oz. Mozzarella Cheese, finely shredded
  • BBQ Sauce
  • Snack Crackers
Instructions
  1. Mix together the cream cheese and sour cream and spread on a platter.
  2. Pour BBQ sauce over cream cheese mixture and then put chicken over BBQ sauce.
  3. Sprinkle finely shredded mozzarella cheese over the top and serve with snack crackers.
Notes
You can dice tomatoes and place that on top of the cheese.
Suggested wine pairing: Beringer Chenin Blanc.

Another “new” item to our stores is the Four Brothers Positively Parmesan Dressing, which you can find in our Produce Department. Wow! This is awesome. Just pour it over your favorite salad and you have a great quick and easy salad. If you are serving a vegetable tray at your next party consider using this dressing for the vegetable dip.

Now it’s time to move onto the main entrée. My family loves ribs and the only time they get them is on weekends because they take so long to make. Not anymore!! We now have Four Brothers Flame Seared Ribs and they are scrumptious!! You can find them in the Full Service Meat Case. They are fully cooked, so all you have to do is pour some BBQ Sauce over the top of them (yes only O’l West) and place in a glass dish in a 350 degree oven and heat for about 20 to 30 minutes. Since they take less than a half hour to heat I can pop these in the oven right after work and we are ready to eat in less than an hour. What a great convenience especially on a weeknight.

My next favorite entrée is our Norwegian Salmon. If you haven’t had a chance to try this salmon in the Meat Department you haven’t had the experience of awesome salmon. This salmon is so fresh and cuts like butter and has such a mild flavor. Seriously I can’t eat enough of it. Here is how I prepare it:

I always leave the skin on because that has all the good Omega 3’s that I’m looking for in my diet. Next I place it in a glass dish and spread my most favorite item on my list “Smude’s Sunflower Oil”. Let me tell you a little bit about this product. First it is locally made in Pierz, MN and I’m all about local! It is the only oil that I use when cooking or baking. Sunflower oil is high in Vitamin E and low in saturated fat. One of my favorite snacks is popcorn and if it is yours you just have to try using this oil when popping homemade popcorn. Its buttery flavor is wonderful and I don’t even have to put butter over the top of my popcorn because the flavor is already there. When using Sunflower Oil for baking cakes I have noticed that the cake becomes moister each day as it sits. What is really great is Coborn’s carries several flavors of the Sunflower Oil and I use them as toppings over salads, when cooking chicken, fish or anything else that calls for oil.

The next step to preparing the salmon is to pour a little of the Sunflower Oil over the top of the salmon and sprinkle our Four Brothers Prime Rib Seasoning. This is my favorite seasoning and I use it over everything. Skip the salt and pepper when you have this flavorful seasoning. Then let the salmon rest for about 15 to 20 minutes with the oil and seasoning on the fish. Then place the salmon in a 400 degree oven and heat until the internal temperature reaches at least 145 degrees. This salmon is so good I usually eat it as an entrée but it is fabulous on crackers as an appetizer or with leftover I serve it over a salad. Oh how yummy!!

Now my next move is towards the sweets because we can’t forget those. Earlier I told you that popcorn is one of my favorite’s and Angie’s Popcorn has so many flavors you just can’t imagine. Again this is a local company made right here in the great state of Minnesota and I love to promote them because they are local. The two flavors that I like at Christmas time are White Chocolate & Peppermint and Frosted Sugar Cookie. Check this company out because they have so many festive flavors especially during holiday time. Once you start eating their popcorn you’ll never be able to stop. Mmmmm so good!

Found in the Frozen Department is Kemps Pink Peppermint Bark Moosetracks Frozen Yogurt, another one of my favorite desserts and this is to die for. It’s loaded with peppermint flavored frozen yogurt, with crunchy peppermint bark, and famous Moose Tracks Fudge. What a great dessert to serve to your guests!

Now last but not least the beverage category. I want to talk about Kemps/JR Watkins Hazelnut Egg Nog. Again another local company right here in Minnesota. They have so many other flavors of Egg Nog that you just have to try. Try using it in your next glass of chocolate milk or in your coffee or even in an Egg Nog Cake. I’ve loved Egg Nog since I was a kid and especially love it added to my chocolate milk. Other flavors they have are Vanilla, Vanilla Almond and Buttered Rum, which you will find in the Dairy Department.

Now I know the next item is not a beverage but it pairs so good with wine I just had to pass it on to you. One of my favorite cheeses is Flagship cheese, which is located in the Deli Department. It is unbelievably good and goes so well with one of my favorite wines called Covey Run, which is a Riesling out of Washington. Serve these two items anytime as an appetizer or with dinner and you will have a hit on your hands.

I have been a nature lover for as long as I can remember. Every morning while I enjoy my cup of tea I watch the birds from my window.Audoban Wild Bird Food Over the years it has become one of my favorite daily pastimes. In addition to appreciating nature, I also enjoy making new DIY crafts that I can share with my friends and family members. This past weekend I took advantage of the weather and made this great DIY Bird Feeder craft, and it has made my morning bird watching an even more enjoyable routine. My birds already love my yard because I use Audubon Wild Bird Food- I swear the birds love this feed the best, and this creative craft compliments Audubon’s 100% Natural Wild Bird Food perfectly.

The best part of this craft is that it is constructed using upcycled coffee cans. Re-purposing the coffee cans that would otherwise be thrown away is a great way to personalize my recycling routine and use my creative abilities!

Throughout the directions and materials list keep in mind what kind of insect you will be making. If you have an idea for a different bug or creature feel free to get creative, purchase different colors of spray paint, and construct that idea too! This craft is especially great for kids to craft with you because they will love to help you refill the feeders with bird seed and then watch the birds alongside you. Great bonding time with the kids or grandkids!

Tools

  •     ScissorsLady Bug Feeder
  •    Wire cutter
  •     Painter’s tape
  •     Drill
  •     Pliers
  •     Utility Knife

Materials:

  •     1 3/8” Oak Dowel
  •     1 Fiberglass Screen
  •     1 16-Gauge Soft Wire
  •      Old Wire
  •      2 Coffee Cans
  •     1 Black Spray Paint
  •     1 Yellow Spray Paint
  •     1 Red Spray Paint
  •     1 E6000 Glue
  •     Sandpaper

Instructions:

  1. Remove the lids from the coffee can containers and take the paper off the cans.
  2. Drill one small hole in the bottom of each can towards the edge of the rim. Eventually, you will insert the hanging wire needed to hang the feeders into these holes. Drill 2 holes in the side of each can for the wings.
  3. Spray-paint the coffee cans & dowel black. Then set aside to dry.
  4. Cut four pieces of wire and twist them to form circles — these will serve as the wings of your insect. Next, cut four pieces of screen to the same size as the wire circles. Run the wire thru the screen towards the edges similar to the picture, twist the wire end, leave a tail or portion of the wire at the end.
  5. For the bee can, apply painter’s tape where you would like to see black stripes. Likewise, apply circles of tape to the ladybug can where you would Bee Feederlike to place the black spots. Then, apply yellow spray paint to the bee can and red spray paint to the ladybug can. When the paint has dried, remove the painter’s tape. Use sandpaper to rough up the cans for the older/rustic look.
  6. Run old wire through the can and bottom hole you made earlier and back around, twist the wire. Then use this wire to hang up in tree. Next, put wings in holes & twist together. Add a small amount of glue on the outside by the holes to seal.
  7. Cut the plastic lids in half. Cut a small hole on bottom of lid to run the dowel through. Glue dowel in can then glue lid to can.
  8. Fill bee & ladybug full of Audborn wild bird seed and enjoy watching the birds eat!

The variety of hops used to flavor beer can be bitter, floral, fruity and even spicy. If you are cooking spicy food, you will certainly enjoy an element of spice in your beer. I would highly recommend a hoppy India pale ale here.

Yeast

The final ingredient is yeast. American wheat beers, Belgian style witbiers and hefeweizens generally have stronger yeast flavors and pair well with lighter foods, such as seafood and salads.

I’m going to share with you the most important part to any party… the food! To alleviate the stress and cost of my party I made mine a potluck. I love a good potluck because you always get to try new recipes and get new ideas. We supplied the Four Brothers burgers for the grill, paper products, chips, cookies and juice and our guests brought the rest.  Here’s how it went down!

Paper Products

If you know me then you know I am very patriotic and a little type-A. So of course I had to have red, white and blue paper products. However, I did not buy the ones with the little American Flags on them. For two reasons, technically you are not supposed to eat on an American Flag and you are not supposed to dispose of an American Flag by throwing it in the garbage. So the patriot in me chose to just represent the fourth with the colors of the flag instead of using the actual flag. Also, you may not use all of the plates, napkins and cups you bought, but you don’t want to throw the rest away and the primary colors will match more party themes you have in the future vs. the American Flag design. But, feel free do what you want, we have both available at Coborn’s, I chose to go with the Domestix and Food Club brand of plates, cups and napkins. They are cheaper and are nice quality. I also picked up a blue plastic table cover in the party section at Coborn’s, to add color and make clean up a breeze.

What is a party with out crepe paper? Not a party! Lol. Okay so I have a weird obsession with crepe paper. It is just so cheap and looks so good. I used one red roll, one white roll and one blue roll of crepe paper. I wrapped it around the deck railing and stapled the paper to itself so I didn’t leave any marks or staples in the deck. I added a couple stars and stripes bows and the mood was set!

They are a half pound burger stuffed will all kinds of flavorful goodness. 4th of July Party Food - www.cobornsblog.comWe have eight varieties including Original, Mushroom Swiss, Cheddar Bacon, Cheddar Swiss, Blue Cheese, Jalapeno Pepper, Philly Cheese and Bacon Onion Cheddar.  With such a big burger, I just counted one per person, no guess work, one was plenty.

Beverages

My party was BYOB (Bring Your Own Beverage), but I did supply some red juice. Again, going with the red, white and blue theme, I picked up some Food Club Cherry Limeade Drink Mix, served it in a pretty pitcher and that was it.

Cookies

I LOVE Lofthouse Cookies. They are like the hybrid of a sugar cookie and a vanilla cupcake. So delicious! There are many brands that try to replicate the Lofthouse cookie and some are not so good. But let me tell you, Sweet P’s hit the nail on the head. These cookies are just as good if not better than Lofthouse. You will not be disappointed. I bought some with white frosting and red, white and blue sprinkles. Tray them up and they are décor and dessert in one!

Chips

Whoever gets assigned to bring chips to the potluck really gets off easy! Especially if they know that at Coborn’s the Food Club chips are always Buy One Get One Free. I bought BBQ Kettle Cooked Potato Chips because they are my favorite and I bought Puffed Corn because… why not, they are delicious, buttery and melt in your mouth.

Fruits & Veggies

My cousin brought fruits and veggies. If you hit up the Coborn’s 5 for $15 Produce Sale, you can get a lot of produce at a great price. She simply cut it up and put it in some Tupperware containers and it was really well displayed and healthy!

American Flag Fruit Pizza

So you probably aren’t supposed to eat the American Flag… but this just represents the flag and is so yummy. Plus, the healthiness of the fruit outweighs the cookie, right? My Mom brought this and it was so good. Check below for the recipe.

Patriotic Fruit Pizza
 
Ingredients
  • 1 Tube Sugar Cookie Dough
  • 8 Oz. Cream Cheese
  • 1 Small Tub Marshmallow Crème
  • Fruit of Your Choice
Instructions
  1. Preheat oven.
  2. Roll cookie dough out to the shape you want.
  3. Lay the cookie dough on a cookie sheet
  4. Bake about 12 – 15 minutes or until golden brown, check back of cookie package for oven temperature and suggested cooking times.
  5. Mix cream cheese and marshmallow crème
  6. Spread cream mixture evenly on top of cooled cookie
  7. Decorate with fruit
Notes
Do not press the cookie dough in the pan, it will stick.

Sweet Corn

What summer party is complete without sweet corn? But, how do you bring that to a potluck where people are continually grazing? My Mom also brought the sweet corn and all she did was shuck and boil the sweet corn, then kept it warm by placing it in a roaster with a couple inches of milk and butter in the bottom. She used two sticks of butter, but you could use only one if you prefer.  The corn stayed warm and the guests simply rolled the corn in the butter mixture before adding it to their plate.
