I love skillet recipes because they are convenient and easy to prepare! The best part is how tender and moist the chicken thighs are. Add bacon and spinach and you have an awesome meal in less than 30 minutes. Enjoy… I did!

Skillet Chicken Thighs
Serves: 4
 
Ingredients
  • 8 Bone-In Chicken Thighs
  • 3 Slices Bacon, chopped
  • 2 Large Carrots, chopped
  • 1 Small Onion, sliced
  • 3 Cloves Garlic, chopped
  • ½ Cup Chicken Broth
  • 6 Cups Fresh Baby Spinach Leaves
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 1 T. Grated Lemon Peel
Instructions
  1. In 12-inch skillet, cook chicken and bacon over medium-high heat 5 minutes, turning chicken once.
  2. Stir in carrots, onions, garlic and broth.
  3. Cook uncovered 15 to 20 minutes, turning chicken and cooking until the internal temperature of chicken reaches 165 degrees and vegetables are tender.
  4. Remove pan from heat; add spinach, salt and pepper.
  5. Stir in mixture about 3 minutes until spinach wilts.
  6. Stir in lemon peel until well blended.

This was the first time I have ever tried Rainbow Trout and I was pleasantly surprised! I never realized how easy it was to prepare trout and how tasty it really is. Grab a great glass of wine and you will have a wonderful entrée! Enjoy….I did!

Garlic & Herb Rainbow Trout
Serves: 4
 
Ingredients
  • 4 Rainbow Trout, ¼ to ½ inch thick (about 1 pound)
  • 2 T. Lime Juice
  • ⅔ Cup Soft Bread Crumbs
  • 1 tsp. Italian Seasoning
  • 2 tsp. Canola Oil
  • ½ tsp. Garlic Powder
  • ¼ tsp. Pepper
Instructions
  1. Set oven control to broil.
  2. Spray broiler pan rack with cooking spray.
  3. Place fish on rack in broiler pan.
  4. Brush with lime juice.
  5. Broil with tops about 4 inches from heat for 3 minutes.
  6. While fish is broiling, mix remaining ingredients.
  7. Spoon bread crumb mixture on top of fish.
  8. Broil about 1 minute long or until internal temperature of fish reaches at least 145 degrees.

It’s the start of a new season and that means it’s time to get out the slow cooker. Here is a perfect recipe on the days you know you won’t have a lot of time after work. It was great! The pork chops were moist and the vegetables were tender with a lot of good flavor. If you don’t care for the flavor of basil you can leave it out. Enjoy… I did!

Slow-Cooker Pork Chops
Serves: 4
 
Ingredients
  • 1-1/2 tsp. Seasoned Salt
  • 1 tsp. Garlic-Pepper Blend
  • 2 T. Olive Oil
  • 4 Boneless Pork Chops, ½ inch thick
  • 1 Cup Baby Carrots
  • 4 Small Red Potatoes, cut in half
  • 1 Onion, cut into thin wedges
  • 1 Small Yellow Summer Squash, thinly sliced
  • 2 T. Dried Basil
Instructions
  1. In small bowl, mix salt and garlic-pepper blend.
  2. Sprinkle half of seasoning mixture over pork.
  3. In 12-inch skillet, heat 1 tablespoon of the oil over medium-heat.
  4. Cook pork chops in oil for about 4 minutes, turning once, until just browned.
  5. Spray 5-quart slow cooker with cooking spray.
  6. Place pork chops in slow cooker; top with carrots, potatoes and onion.
  7. Cover and cook on low heat setting for 6-7 hours.
  8. In medium bowl, mix squash, basil, remaining 1 tablespoon oil and remaining half of seasoning mixture; spoon on top of vegetable mixture in slow cooker.
  9. Increase heat setting to High.
  10. Cover; cook 10 to 15 minutes longer or until squash is crisp-tender.

Grilled Seasoned Pork Roast
Serves: 8
 
Ingredients
  • 2 tsp. Garlic Powder
  • 1-1/2 tsp. Onion Powder
  • 1 tsp. Salt
  • 2 tsp. Poultry Seasoning
  • 1 tsp. Chili Powder
  • 3 Lb. Boneless Pork Loin Roast
Instructions
  1. Heat gas or charcoal grill for indirect-heat.
  2. In small bowl, mix all ingredients except roast.
  3. Rub mixture onto all sides of roast.
  4. Place roast, fat side up, on grill for indirect cooking.
  5. Cover grill; cook approximately 1 hour and 30 minutes until internal temperature of pork reaches at least 145 degrees.
  6. Let stand 10 to 15 minutes before slicing.
