This is one of the easiest recipes I have ever made. It’s quick to put together when you get home from work. The flavor is outstanding and the Duroc Pork Chops are the best! Very tender and very flavorful. Add a side of green beans and you have the perfect weeknight dinner in under 30 minutes. Enjoy… I did!

Italian Crusted Boneless Pork Chops
Serves: 4
 
Ingredients
  • 4 Boneless Pork Chops
  • ¼ Cup All-Purpose Flour
  • ½ tsp. Seasoned Salt
  • ¼ tsp. Garlic Powder
  • 3 T. Milk
  • ½ Cup Seasoned Dry Bread Crumbs
  • 2 T. Olive Oil
  • Shredded Parmesan Cheese, optional
Instructions
  1. Between pieces of plastic wrap or waxed paper, place each pork chop; gently pound with flat side of meat mallet or rolling pin until about ¼ inch thick.
  2. In shallow bowl, mix flour, seasoned salt and garlic powder.
  3. Place milk and bread crumbs in separate shallow bowls.
  4. Dip each pork chop in flour mixture, then dip in milk.
  5. Coat well with bread crumbs.
  6. In 12 inch skillet, heat oil over medium heat.
  7. Cook pork in oil 6 to 8 minutes, turning once, until internal temperature of pork reaches at least 145 degrees.
  8. Sprinkle with cheese.

Almond Crusted Cod
Serves: 2
 
Ingredients
  • 8 Oz. Fresh Skinless Cod Fillets
  • 2 T. Flour
  • 1 Egg White
  • 1 T. Milk
  • 2 T. Bread Crumbs
  • 2 T. Almonds, finely chopped
  • ½ tsp. Fresh Thyme
  • 1 T. Canola Oil
Instructions
  1. Preheat oven to 450 degrees.
  2. Lightly coat a 9x9x2 inch baking pan with cooking spray.
  3. Rinse fish; pat dry with paper towels.
  4. Cut fish into two serving-size pieces.
  5. Place flour in a shallow dish.
  6. In another shallow dish, whisk together egg white and milk.
  7. In a third shallow dish, combine bread crumbs, almonds and thyme.
  8. Coat both sides of fillets with flour.
  9. Dip fillets in the egg mixture; dip in bread crumb mixture to coat.
  10. Place fish in prepared pan.
  11. Drizzle fish with oil.
  12. Bake until fish reaches an internal temperature of 145 degrees.

During the winter months I always set a goal to go through all my cupboards and closets in my home and get rid of everything I no longer want or need by the time spring arrives. I had each one of the kids stop home and take their junk that they have stored here for years and if they didn’t want it, I would make sure to donate it to our favorite charity. Well, spring has arrived and I accomplished my goal. I can’t believe how much storage space I have and the best part of going into summer, my house is clean and all the junk is gone.

Just Bare Chicken Attributes - www.cobornsblog.comNow that I have all this extra time, I had a few of my girlfriends over for dinner the other night right after work and I knew that wouldn’t give me much time to come up with something so I prepared a meal that is my husband’s absolute favorite and it is so quick and easy to make. I have served this many times for dinner parties and even for Easter Dinner instead of the traditional ham. I have had so many requests for this recipe and finally my girlfriends the other night told me to put it on my next blog, so here it is. All it takes is 30 minutes of your time. I also have to tell you a little bit about the chicken that I use in this recipe. I want to make sure that I am serving a good and healthy product to my family and friends, so I choose Just BARE Chicken because of the attributes listed in the graphic above.

Crusted Parmesan Chicken

Crusted Parmesan Chicken
Serves: 4
 
Ingredients
  • 1 Package Rice-A-Roni Chicken Flavored Rice
  • 1 Cup Half-n-Half or Heavy Whipping Cream
  • 1 Tub Chive & Onion Flavored Cream Cheese
  • ½ Cup Shredded Parmesan Cheese
  • 2 Packages Fresh Chicken Tenders
  • 1 Box Fryin’ Magic Seasoned Coating Mix
Instructions
  1. Prepare Chicken Flavored Rice according to package in frying pan and keep warm.
  2. Moisten chicken tenders with a little water.
  3. Pour Fryin’ Magic into plastic re-sealable bag along with chicken tenders.
  4. Shake to coat the chicken tenders.
  5. Preheat ¼ cup oil in a skillet.
  6. Brown pieces of chicken over medium heat for 5 minutes, per side.
  7. Cook until internal temperature of chicken reaches at least 165°F.
  8. Melt one tub of Chive & Onion Flavored Cream Cheese in pan
  9. Add 1 cup half-n-half, and ½ cup shredded Parmesan cheese.
  10. Mix all together until it forms a nice creamy sauce.
  11. Now it’s time to serve. Let your company help themselves by placing rice on their plate, then top with 3-4 pieces of chicken and pour Parmesan sauce over the top.

Then all you need is a side of fresh asparagus or garden fresh beans and you have the perfect meal.  My husband loves this recipe so much that I think he would give up a steak dinner for this and believe me I thought I would never see that day.  Enjoy…..we all did!

This was a wonderful recipe to make when I got home from work because not only a lot healthier than some things but it was so quick and easy to make and the flavors blended so well together. Serve a side of fresh asparagus along with a great glass of wine and you have the perfect evening meal. Enjoy….I did!

Lemon and Parmesan Crusted Salmon
Serves: 4
 
Ingredients
  • 1-1/4 Lb. Salmon Fillet
  • 2 T. Butter, melted
  • ¼ tsp. Salt
  • ¾ Cup Fresh White Bread Crumbs
  • ¼ Cup Grated Parmesan Cheese
  • 2 T. Green Onions, thinly sliced
  • 2 tsp. Grated Lemon Peel
  • ¼ tsp. Dried Thyme Leaves
Instructions
  1. Heat oven to 375°F.
  2. Spray shallow baking pan with cooking spray.
  3. Pat salmon dry with paper towel.
  4. Place salmon, skin side down, in pan; brush with 1 tablespoon of the butter.
  5. Sprinkle with salt.
  6. Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl.
  7. Stir in remaining 1 tablespoon butter.
  8. Press bread crumb mixture evenly on salmon.
  9. Bake uncovered 15 to 25 minutes until the internal temperature of the salmon is 145°F.
