Storing Fresh Sweet Corn
How should you store your sweet corn? Wrap unhusked ears with a damp paper towel. Cover and refrigerate for up to two days. Corn on the cob is best if used as soon as possible after you buy it. Coborn’s has a great guide online about storing produce.
How to Grill Sweet Corn
Grilling sweet corn is a great way to bring out the amazing freshness and flavors of this crop. And, grilling corn is easy to do – you just need to plan ahead.
First, peel back the husk without removing it from the corn cob. Then, remove the silk – those annoying string things on the corn – from the cob. If you’re having trouble getting the silk off, try using a damp paper towel or vegetable brush to scrub the strings off the corn. Fold the husks back to cover the corn – you can tie the corn with kitchen twine to keep it tightly closed. Soak the corn in water for at least 30 minutes – an hour or more is even better. Grill the corn over direct medium heat for about 20 minutes, turning frequently.
Compound Butters for Sweet Corn
The sweet corn for sale right now is great – but sometimes you just need a little butter to give it a little boost! Compound butters – butter that’s softened and flavored – are a great way to make sweet corn a little fancy.
This recipe for Chipotle Pepper Compound Butter is delicious. It adds a little heat to the sweetness of the corn – you can use Parmesan cheese instead of the Cotija in the recipe.
