Red Leaf: Jalapeño Poppers

Jalapeño Poppers
Serves: 16
  • 16 Jalapeños
  • 4 Oz. Cream Cheese, room temperature
  • 1 Cup Red Leaf Cheddar Cheese, finely shredded
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 3 Cups Canola Oil
  • ¼ Cup Corn Starch
  • ¼ Cup Flour
  • 2 Large Eggs, lightly bean ten
  • 2 Cup Panko Bread Crumbs
  1. Make slit down middle of each jalapeño, being sure to keep steam and end intact.
  2. Use small spoon to remove seeds and membrane.
  3. In small bowl, mix together cream cheese, cheddar cheese, salt and pepper.
  4. Stuff each jalapeño with cream cheese/cheddar mixture.
  5. Pour canola oil in a dutch oven; turn heat to medium.
  6. Warm oil to 350 degrees F.
  7. Line a cutting board with a few sheets of paper towels and set aside.
  8. Using four shallow dishes, place corn starch, eggs, flour and bread crumbs in separate dishes.
  9. In batches, dip jalapeños in corn starch, flour, eggs and panko bread crumbs.
  10. Carefully drop the jalapeños into hot oil and fry until golden, about 2 to 3 minutes.
  11. Transfer to bed of paper towels to drain and serve immediately.
