Weekly Ad Recipe – Garlic & Herb Rainbow Trout

This was the first time I have ever tried Rainbow Trout and I was pleasantly surprised! I never realized how easy it was to prepare trout and how tasty it really is. Grab a great glass of wine and you will have a wonderful entrée! Enjoy….I did!

Garlic & Herb Rainbow Trout
Serves: 4
 
Ingredients
  • 4 Rainbow Trout, ¼ to ½ inch thick (about 1 pound)
  • 2 T. Lime Juice
  • ⅔ Cup Soft Bread Crumbs
  • 1 tsp. Italian Seasoning
  • 2 tsp. Canola Oil
  • ½ tsp. Garlic Powder
  • ¼ tsp. Pepper
Instructions
  1. Set oven control to broil.
  2. Spray broiler pan rack with cooking spray.
  3. Place fish on rack in broiler pan.
  4. Brush with lime juice.
  5. Broil with tops about 4 inches from heat for 3 minutes.
  6. While fish is broiling, mix remaining ingredients.
  7. Spoon bread crumb mixture on top of fish.
  8. Broil about 1 minute long or until internal temperature of fish reaches at least 145 degrees.

Almond Crusted Cod
Serves: 2
 
Ingredients
  • 8 Oz. Fresh Skinless Cod Fillets
  • 2 T. Flour
  • 1 Egg White
  • 1 T. Milk
  • 2 T. Bread Crumbs
  • 2 T. Almonds, finely chopped
  • ½ tsp. Fresh Thyme
  • 1 T. Canola Oil
Instructions
  1. Preheat oven to 450 degrees.
  2. Lightly coat a 9x9x2 inch baking pan with cooking spray.
  3. Rinse fish; pat dry with paper towels.
  4. Cut fish into two serving-size pieces.
  5. Place flour in a shallow dish.
  6. In another shallow dish, whisk together egg white and milk.
  7. In a third shallow dish, combine bread crumbs, almonds and thyme.
  8. Coat both sides of fillets with flour.
  9. Dip fillets in the egg mixture; dip in bread crumb mixture to coat.
  10. Place fish in prepared pan.
  11. Drizzle fish with oil.
  12. Bake until fish reaches an internal temperature of 145 degrees.

Mahi Mahi is found in most of the world’s warm waters. It is caught in the Caribbean, off the shores of Florida, near Hawaii and southern California. It is mild and slightly sweet, firm with large flakes. It is one of my favorite fish. If this is your first time preparing Mahi Mahi this is the recipe to start with. It is very easy to prepare and the fresh flavor of lemon goes so well with this type of fish.  Enjoy….I did!

Weekly Ad Recipe - Crusted Top Mahi Mahi
Serves: 4
 
Ingredients
  • ¼ Cup Italian-Style Bread Crumbs
  • ¼ Cup Parsley, chopped fresh
  • 2 tsp. Zest of Lemon
  • 1 T. Butter or Margarine, melted
  • 1 Lb. Mahi Mahi Fillet
  • ¼ tsp. Seasoned Salt
  • 1 T. Lemon Juice
Instructions
  1. Heat oven to 425 degrees.
  2. Line rectangular pan, with aluminum foil; spray foil with cooking spray.
  3. Mix bread crumbs, parsley, lemon peel and butter.
  4. Cut fish into 4 serving pieces.
  5. Place fish in pan.
  6. Sprinkle with seasoned salt.
  7. Drizzle with lemon juice.
  8. Spoon crumb mixture over each piece; press lightly.
  9. Bake uncovered 15 to 20 minutes until internal temperature reaches at least 145 degrees.

Weekly Ad Recipe - Ranch Chicken Tenders
Serves: 4
 
Ingredients
  • ⅓ Cup Ranch dressing
  • 1 tsp. Basil Leaves, dried
  • 1 Cup Panko Crispy Bread Crumbs, plain
  • 1 Pkg. Chicken Tenders, uncooked fresh boneless skinless
Instructions
  1. Heat oven to 400 degrees.
  2. Spray large cookie sheet with cooking spray.
  3. In small bowl, mix ⅓-cup ranch dressing and the basil.
  4. In large re-sealable plastic bag, place bread crumbs.
  5. Dip chicken into ranch dressing mixture.
  6. Place chicken in bread crumb bag; seal and shake to coat.
  7. Place chicken on cookie sheet.
  8. Bake 15 to 20 minutes, turning once, until chicken reaches an internal temperature of 165 degrees.
  9. Serve with additional ranch dressing.

If you want to be a hit with the kids, just serve this recipe. This is the perfect recipe to make when they get home from all the after school activities and you don’t have a lot of time. This is one of the quickest and easiest recipes for chicken and the taste is oh so good. Enjoy….I did!
