Welcome to the first ever, Fresh Meal Planning Blog! The place for convenient, delicious and tasty FRESH meals that will bring the family back together around the dinner table. Each week, this blog will feature 7 tasty and quick meals for a family of four. Best of all? These Fresh Meals are under $75 total! At Coborn’s, we are always looking for time-saving meal ideas, because let’s face it – life is busy, especially when it hits the middle of August. Soon our minds will be focused on back-to-school and all of the hustle and bustle that comes with that, but it’s important to us that you have easy-to-make meals available for you.

While following along with this meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. DAY ONE: 

Street Tacos with Avocado

We will start the week off strong with these super tasty Carne Street Tacos. From the tender juicy steak to the tangy lime and spicy jalapeño, these tacos have a combination of flavors that are sure to satisfy your whole family!

Street Tacos with Avocado
 
Ingredients
  • Certified Boneless Hereford Beef New York Strip Steak
  • 2 Corn Tortillas
  • 2 Limes
  • 1 Orange
  • ¼ Cup Olive Oil
  • 5-6 Garlic Cloves, minced
  • ½ Jalapeño, finely chopped with vine and seeds removed
  • 1 tsp. Cumin
  • ½ tsp. Chile Powder
  • ½ tsp. Oregano
  • ½ tsp. Salt
  • Black Pepper, to taste
  • ¾ Cup Fresh Cilantro
  • 1 Avocado, sliced
Instructions
  1. Combine marinade ingredients in small bowl and mix well.
  2. Put steak and marinade in zip lock bag and let steak marinate for a few hours.
  3. Remove steak from marinade. Grill steak to desired doneness.
  4. Remove from grill and let steak rest a bit, then slice against grain into thin strips.
  5. Fill warmed corn tortillas with some steak, top with additional cilantro and a squeeze of lime.

DAY TWO: 

Tomato Avocado Mozzarella Salad

We all know how delicious meat is, but what about fresh and delicious veggies and cheese? This fresh salad is a meal on its own but is made even better with some fresh baked buttery Rhode’s Rolls.

Tomato Avocado Mozzarella Salad
 
Ingredients
  • SALAD
  • 4 Cups Cherry Tomatoes, halved
  • 2 Avocados, diced
  • 8 Oz. Shredded Mozzarella Cheese
  • ½ Cup Fresh Basil, chopped
  • DRESSING
  • ¼ Cup Olive Oil
  • ¼ Cup Balsamic Vinegar
  • 3 T. Honey, warmed
  • Salt, to taste
Instructions
  1. In a large bowl, combine all salad ingredients, except Mozzarella cheese balls.
  2. In a small bowl, combine all dressing ingredients: whisk olive oil, balsamic vinegar and honey until nice and smooth.
  3. Add the salad dressing to the large bowl with salad, sprinkle with a small amount of salt, and toss to combine.
  4. Taste and season with more salt, if needed.
  5. Add shredded mozzarella when ready to eat.
  6. Enjoy!

DAY THREE: 

Oven Fried Honey-Garlic Chicken

Is there honestly anything better than hot, crispy fried chicken? This recipe is made healthier by “frying” it in the oven and adding some tasty broccoli.

Oven Fried Honey Garlic Chicken
 
Ingredients
  • 2 Broccoli Heads, washed, dried and cut into florets
  • 2 T. Olive Oil
  • 1 tsp. Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Gold n’ Plump 8 Piece Chicken, diced
  • ½ Cup Flour
  • 1 Egg
  • 2 T. Milk
  • 3 T. Honey
  • 1 tsp. Garlic Powder
  • 1 tsp. Paparika
  • 1¾ Cups Bread Crumbs
  • ⅓ Cup Vegetable Oil
Instructions
  1. Preheat oven to 390°F. Line a baking sheet with baking / parchment paper or spray a nonstick tray with cooking oil spray; set aside.
  2. Add the broccoli to a bowl with the oil, garlic, salt and pepper, mix to combine.
  3. Set aside.
  4. Season chicken with salt and pepper.
  5. In a small bowl, add the flour and set aside.
  6. In a second bowl, whisk together eggs, milk, garlic powder and the ¾ teaspoon of salt and paprika.
  7. In the third bowl, mix the bread crumbs with the vegetable oil.
  8. One by one, evenly coat the chicken in the flour, then dip into the egg mixture, then dredge in the bread crumb mixture, pressing to coat.
  9. Place onto prepared baking sheet and repeat with remaining chicken thighs.
  10. Lightly spray each chicken thigh over the top with cooking oil spray.
  11. Bake for 25 minutes, remove from the oven and arrange the broccoli next to or around the chicken, and place back into the oven to cook for a further 20 minutes, or until the chicken is cooked through; the crust is crispy and golden brown, and the broccoli is tender-crisp.
  12. While the chicken is in the oven, prepare the Honey Garlic Sauce:
  13. In a small saucepan, combine honey soy sauce and garlic.
  14. Bring to a simmer over medium heat, and quickly reduce heat to low.
  15. Pour the prepared cornstarch mixture into the saucepan and stir through until sauce thickens.
  16. Set aside and allow to cool.
  17. Garnish chicken with parsley and serve immediately with the honey garlic sauce.

Lemon Garlic Pasta

This easy, zesty pasta dish is sure to please even the pickiest of eaters. Feel free to pair it with a salad of your choice or one of our Fresh Express Clamshell Salads that are family sized and featured in the 5 for $15.00 Produce Sale!

Lemon Garlic Pasta
 
Ingredients
  • 1 Head of Garlic
  • ¼ Olive Oil
  • 4-5 T. Fresh Lemon Juice - 1 Large Lemon
  • Lemon Zest
  • Salt, to taste
  • ⅛ tsp. Red Pepper Flakes
  • Food Club Angel Hair Pasta, cooked to al dente
  • Food Club Grated Parmesan Cheese
Instructions
  1. Place peeled garlic cloves in an oven safe dish, drizzle with olive oil and cover with foil.
  2. Oven roast at 400° for 30-40 minutes (until lightly golden browned).
  3. Let cool for 2-3 minutes, then chop.
  4. Cook pasta according to package directions.
  5. Feel free to use a different type of pasta if you prefer.
  6. In a large sauté pan over medium/low heat - heat the olive oil and chopped garlic for 4-5 minutes while stirring.
  7. Add the lemon juice and continue cooking for 2-3 minutes.
  8. Reduce heat to low and add the salt and red pepper flakes.
  9. Add the cooked pasta and toss with the lemon garlic sauce until fully coated.
  10. Transfer to serving dishes and top with a drizzle of olive oil, lemon zest, fresh grated parmesan cheese and red pepper flakes.

Ingredients
  • 2 Packages Plain Bagels, sliced in half
  • ½ Cup Marinara Sauce
  • 1 Cup Chicken, chopped
  • 1 Cup Shredded Mozzarella Cheese
Instructions
  1. Preheat broiler.
  2. Place bagel halves, cut sides up, on a baking sheet.
  3. Broil 2 minutes or until lightly toasted.
  4. Spread 2 T. marinara on cut side of each bagel half.
  5. Top each half with ¼ cup chicken, and sprinkle with ¼ cup cheese.
  6. Broil bagel halves an additional 2 minutes or until cheese melts.

BLT Grilled Cheese

Grilled cheese and tomato soup: probably one of the most popular meals of our childhood. This recipe takes it a step further and jazzes up this classic combo.

BLT Grilled Cheese
 
Ingredients
  • 8 Slices Bread
  • 8 Slices Cheddar Cheese
  • 8 Slices Cooked Bacon
  • 1 Tomato
  • 4 T. Butter
  • 2 Cans of Tomato Soup
Instructions
  1. Spread butter on one side of each slice of bread, then stack buttered sides together.
  2. Layer 2 slices cheddar on top of bread stack, then bacon slices, then tomato and finally the remaining slices of cheese.
  3. Place bread buttered side down in a fry pan over medium-high heat.
  4. Cover with lid and let cook for 3-4 minutes or until golden.
  5. Reduce heat to medium and flip sandwich to other side and cook for 2-3 minutes or until bread is toasty golden and cheese has melted.
  6. The second side will cook faster than the first so watch carefully.
  7. Cut in half and enjoy with tomato soup!

This fall the Coborn’s Support Center moved to a brand new building. The building, my workspace and the entire campus are absolutely beautiful and it creates a wonderful atmosphere to work at, but unfortunately I have to drive a little farther for my daily commute. With busy mornings where you are trying to get up and go quickly, I needed something that makes planning out lunches a little bit easier.

I suppose the easiest lunchtime solution is to go out to eat, which I’ll admit is nice occasionally, but it can be pricey to do everyday Kraft-Dressingand not always healthy for you. That’s why I’ve collected some delicious recipes to share with you all that I promise will spruce up any boring lunch routine!

Food Prep Freshness

Glass mason jars help to keep the salads very fresh, and by using wide mouth  jars I have created delicious salads that are perfect for anyone on the go or looking for a healthy and fun way to get their greens in- no salad bowl necessary. My mason jars were even chalkboard jars I picked up from a craft store for added lunchtime creativity!

Everything on my Facebook homepage lately seems to feature food recipes, clean eating blogs and meal prepping ideas. What better way to follow suit than to make my complete week of salads on Sunday evening and have them ready to go for the entire week.

I love the taste, freshness and most of all the convenience of these Mason Jar Salads. Best of all you can make so many different varieties, which means lunchtime doesn’t need to be boring, it can be as original as each day of the week!

Ingredients
  • 2 T. Kraft Balsamic Vinaigrette
  • 4-6 Baby Carrots, chopped
  • ¼ Cup Peas
  • ¼ Cup Peppers, chopped
  • ¼ Cup Garbonzo Beans
  • ¼ Cup Reduced Fat Feta Cheese
  • ½ Cup Tomato, chopped
  • 2 Cups Spring Mix Salad Greens with Kale
Instructions
  1. Wash Jar.
  2. In the same order that is listed above add your ingredients to a wide mouthed mason jar.
  3. Shake jar when ready to be eaten and refrigerate if you are saving it for a later date.
Notes
Dietitian's Notes:
-This salad is great because the wide variety of vegetables are full of fiber, vitamins and minerals.
-Add dried cranberries to your salad to represent as many food groups as possible, but make sure no sugar is added!
-Make sure you always have beans or some sort of protein added to your meals, and if a salad is your full meal make extra sure they are added!
-Olive Oil and Balsamic Vinegar add a great flavor and provide healthy fats.
-Aside from the Feta Cheese (19) and the Balsamic Vinegar (18) all of these ingredients have a 100 on the NuVal Scoring System!

  • ½ Cup Tomatoes, chopped
  • 1 Avocado, chopped
  • 6 Bacon Slices, cooked and chopped
  • 2 Cups Lettuce or Spinach Mix
Instructions
  1. Wash Mason Jar.
  2. Add ingredients in the order listed above.
  3. Keep refrigerated until ready to eat.
  4. Shake jar, add chips and enjoy!

  • ½ Cup Cucumber, chopped
  • ½ Cup Tomatoes, chopped

  • 2 T. Reduced Fat Crumbled Feta Cheese
  • 1 T. Black Olives, chopped
  • 2 Cups Romaine Lettuce, chopped
Instructions
  1. Wash Mason Jar.
  2. Layer jar with dressing, cucumbers, tomatoes and onions.
  3. Add in chicken, feta cheese and olives.
  4. Top with lettuce.
  5. Refrigerate until ready to eat.
  6. When ready to eat shake jar.

  1. Wash Mason Jar.
  2. Add ingredients in the order as listed above.
  3. When ready to eat shake jar and enjoy.
  4. Be sure to refrigerate if salad is going to be eaten at a later date.

  • 1 T. Salsa
  • 2 T. Sour Cream
  • ¼ Cup Taco Meat
  • ½ Cup Tomatoes, chopped
  • ¼ Cup Kidney Beans
  • ⅛ Cup Shredded Cheddar Cheese
  • ½ Cup Tortilla Chips, crushed
  • 2 Lettuce, shredded
Instructions
  1. Wash Jar.
  2. Add ingredients in same order as listed above.
  3. Refrigerate until ready to eat.
  4. When ready to eat shake jar.

  • 2 T. Kraft Creamy Poppyseed Dressing
  • ½ Cup Strawberries, sliced
  • ¼ Cup Blueberries
  • ¼ Cup Almonds
  • 2 Cups Romaine and Spinach to Brim of Jar
Instructions
  1. Wash Jar.
  2. Wash produce.
  3. Add ingredients in order to above and keep refrigerated.
  4. When ready to eat shake jar and enjoy.

Tips & Tricks

The number one most important rule to remember when making these salads is to always keep the dressing at the bottom and the salad greens at the top of the jar. Keep the two layers as far away from one another as possible by having them separated with your hard veggies, protein and soft veggies. If you do that, your greens will stay crispy and fresh with no problems.

Follow this Layer List:

  •  Layer 1 (Bottom of Jar): 2-4 T. Dressing of Choice
  • Layer 2: Hard Veggies- This is where you add in carrots, bell peppers, celery, cucumbers, broccoli, cauliflower, etc.
  • Layer 3: Protein- This is where you will add the cheese, meats, beans, hard-boiled eggs, etc.
  • Layer 4: Soft Veggies- In this section you will add tomatoes, onions, corn, avocado, etc.
  • Layer 5 (Top of Jar): Greens to the Brim- Add in your lettuce and/or spinach.

Try to keep the ratio of each jar about half-and-half. That means half of the jar holds the toppings, dressing, grains, proteins and half of the jar holds the greens.

As I mentioned I like to make several of these jars on Sunday evening so I’m prepared for speedy grab and go lunches later on in the week. Luckily these salads last a week in the refrigerator!

Because these jars are so full to the brim you might have to eat off a layer or two of greens (yum!), then replace the lid, shake the heck out of it to distribute the dressing, and then dig right in with a fork.
