Weekly Ad Recipe – Mediterranean Pot Roast

This recipe is outstanding and the Mediterranean flavor puts this roast over the top. I love the sun-dried tomato and olive flavors in this roast. Since I love olives I also added a few Kalamata olives to this recipe. Enjoy… I did!

Mediterranean Pot Roast
Serves: 8
 
Ingredients
  • 3 Lb. Boneless Rump Roast
  • 1 tsp. Salt
  • 1 Tbsp. Italian Seasoning
  • 1 Large Garlic Clove, finely chopped
  • ⅓ Cup Sun-Dried Tomatoes In Oil, drained and chopped
  • ½ Cup Sliced Pitted Ripe Olives
  • ½ Cup Beef Broth
  • ½ Cup Frozen Pearl Onions
Instructions
  1. Spray 12-inch skillet with cooking spray; heat over medium-high heat.
  2. Cook beef in skillet about 5 minutes, turning once, until brown.
  3. Sprinkle with salt, Italian seasoning and garlic; remove from skillet.
  4. Place beef, seasoned side up, in 4 or 5 quart slow cooker.
  5. Spread tomatoes and olives over roast.
  6. Add broth and onions.
  7. Cover and cook on low heat setting for 7-8 hours until beef reaches an internal temperature of 145 degrees.
  8. Remove beef from slow cooker; cover and let stand 15 minutes.
  9. Slice beef; serve with beef juice and onions from slow cooker.

Comfort Food Recipe – Chili

Ingredients
  • 2 tsp. Oil
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1 Lb. Lean Ground Beef
  • ¾ Lb. Beef Sirloin, cubed
  • 14 Oz. Can Diced Tomatoes
  • 1 Can Dark Beer
  • 1 Cup Strong Coffee
  • 12 Oz. Can Tomato Paste
  • 1 Can Beef Broth
  • ½ Cup Brown Sugar
  • 3½ Tbsp Chili Sauce
  • 1 Tbsp Cumin
  • 1 Tbsp Cocoa
  • 1 tsp. Oregano
  • 1 tsp. Cayenne
  • 1 tsp. Coriander
  • 1 tsp. Salt
  • 4 Cans (15 Oz.) Kidney Beans
  • 4 Chili Peppers, chopped
Instructions
  1. Heat oil.
  2. Cook onions, garlic and meat until browned.
  3. Add tomatoes, beer, coffee, tomato paste and beef broth.
  4. Add brown sugar, spices, 2 cans of kidney beans and peppers; mix well.
  5. Reduce heat and simmer for 1½ hours.
  6. Add remaining 2 cans of kidney beans and simmer for another 30 minutes.

 

Comfort Food Recipe – Goulash

Goulash
Serves: 6-8
 
Ingredients
  • 1 Lb. Ground Beef
  • 1 Medium Onion, chopped
  • 1 Medium Green Bell Pepper, chopped
  • 3 Garlic Cloves, diced and smashed
  • 8 Oz. Elbow Macaroni
  • 14 Oz. Can Tomatoes, diced
  • 15 Oz. Can Tomato Sauce
  • 15 Oz. Can Whole Kernel Corn
  • Salt and Pepper To Taste
Instructions
  1. Brown meat in large skillet.
  2. Add onion and bell pepper to skillet halfway through cooking.
  3. Drain excess fat from skillet and add garlic; stir.
  4. Boil pasta until al dente; drain.
  5. Add tomatoes, tomato sauce, corn and meat mixture to pasta; mix well.
  6. Season to taste.

If you like an Italian blend of spices like myself, this is the roast for you! The tomato mixture combined with fresh garlic and tomatoes was fantastic! This was such an easy recipe to throw together before I left for work in the morning. Plus, it was awesome to come home and have dinner already done. Enjoy….I did!

Italian Style Beef Roast
Serves: 8
 
Ingredients
  • ½ Cup Onion, chopped
  • 14.5 Oz. Can Diced Tomatoes, undrained
  • 3 Lbs. Boneless Beef Rump Roast
  • 2 Slices Bacon, chopped
  • 1 Clove Garlic, finely chopped
  • 1 T. Italian Seasoning
  • 3 T. Cornstarch
  • ¼ Cup Water
  • 8 Oz. Whole Fresh Mushrooms
Instructions
  1. In 5 quart slow cooker, mix onion and tomatoes.
  2. Place beef in slow cooker.
  3. In small bowl, mix bacon, garlic and Italian seasoning; rub over beef.
  4. Cover; cook on low heat setting 8 to 10 hours.
  5. Remove beef from cooker.
  6. In small bowl, mix cornstarch and water; stir into tomato mixture.
  7. Return beef to cooker.
  8. Cut large mushrooms in half and arrange around beef.
  9. Increase heat setting to high.
  10. Cover; cook 20 to 30 minutes until tomato mixture has thickened and beef has reached an internal temperature of 135 degrees.
