Skillet Chicken Thighs
Serves: 4
 
Ingredients
  • 8 Bone-In Chicken Thighs
  • 3 Slices Bacon, chopped
  • 2 Large Carrots, chopped
  • 1 Small Onion, sliced
  • 3 Cloves Garlic, chopped
  • ½ Cup Chicken Broth
  • 6 Cups Fresh Baby Spinach Leaves
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • 1 T. Grated Lemon Peel
Instructions
  1. In 12-inch skillet, cook chicken and bacon over medium-high heat 5 minutes, turning chicken once.
  2. Stir in carrots, onions, garlic and broth.
  3. Cook uncovered 15 to 20 minutes, turning chicken and cooking until the internal temperature of chicken reaches 165 degrees and vegetables are tender.
  4. Remove pan from heat; add spinach, salt and pepper.
  5. Stir in mixture about 3 minutes until spinach wilts.
  6. Stir in lemon peel until well blended.

This is one of the easiest recipes I have ever made. It’s quick to put together when you get home from work. The flavor is outstanding and the Duroc Pork Chops are the best! Very tender and very flavorful. Add a side of green beans and you have the perfect weeknight dinner in under 30 minutes. Enjoy… I did!

Italian Crusted Boneless Pork Chops
Serves: 4
 
Ingredients
  • 4 Boneless Pork Chops
  • ¼ Cup All-Purpose Flour
  • ½ tsp. Seasoned Salt
  • ¼ tsp. Garlic Powder
  • 3 T. Milk
  • ½ Cup Seasoned Dry Bread Crumbs
  • 2 T. Olive Oil
  • Shredded Parmesan Cheese, optional
Instructions
  1. Between pieces of plastic wrap or waxed paper, place each pork chop; gently pound with flat side of meat mallet or rolling pin until about ¼ inch thick.
  2. In shallow bowl, mix flour, seasoned salt and garlic powder.
  3. Place milk and bread crumbs in separate shallow bowls.
  4. Dip each pork chop in flour mixture, then dip in milk.
  5. Coat well with bread crumbs.
  6. In 12 inch skillet, heat oil over medium heat.
  7. Cook pork in oil 6 to 8 minutes, turning once, until internal temperature of pork reaches at least 145 degrees.
  8. Sprinkle with cheese.

Pork Chops & Creamy Chive Sauce
Serves: 4
 
Ingredients
  • 1 T. Olive Oil
  • 4 Boneless Pork Chops
  • ⅓ Cup Chicken Broth
  • 4 Oz. Cream Cheese
  • ¼ Cup Chopped Fresh Chives
Instructions
  1. In large skillet, heat oil over medium heat.
  2. Sprinkle both sides of pork chops with salt and pepper; add to skillet.
  3. Cook about 10 minutes, turning once, until internal temperature reaches at least 145 degrees.
  4. Add broth and cream cheese to warm skillet and whisk together for about 5 minutes, until cheese is melted and sauce is smooth.
  5. Stir in chives and mix together.
  6. Spoon sauce over pork chops.

Honey Glazed Salmon
Serves: 2
 
Ingredients
  • 8 Oz. Norwegian Salmon Fillet, cut into 2 pieces
  • 1 tsp. Honey
  • 1 tsp. Ketchup
Instructions
  1. Heat oven to 450 degrees.
  2. Line cookie sheet with foil; spray foil with cooking spray.
  3. Place salmon on foil.
  4. In small bowl, stir together honey and ketchup.
  5. Spread mixture over salmon.
  6. Bake 12 to 18 minutes until internal temperature of Salmon reaches 145 degrees.
