Grilled Pork Chops With Tomato & Zucchini
  • 4 Bone-in Center cut Pork Chops
  • 8 Oz. Cherry Tomatoes, or grape tomatoes
  • 2 Zucchini, cut into 1-inch chunks
  • 1 Red Onion, cut into 1-inch chunks
  • 2 Tbsp. Olive Oil
  • Salt and Pepper
  • Seasoned Salt, such as Lawry’s
  1. In large bowl, toss tomatoes, zucchini, onion, olive oil, salt and pepper to taste. Set aside.
  2. Prepare grill to medium-high heat and lightly oil the grate.
  3. Season pork with seasoned salt; grill until internal temperature reaches 145°F, about 4½ minutes per side.
  4. Place vegetables in grill basket (or wrap in foil); grill, turning or tossing occasionally, until crisp-tender and lightly charred, 8 to 10 minutes.
  5. Remove chops from grill and let rest 3 minutes. Remove vegetables and cover to keep warm while chops rest. Serve the chops topped with the vegetables.
