Welcome back! I’ve said it time and time again, I’m a busy woman. When I get home from work I don’t always have time to spend hours in the kitchen, and I have a feeling there are those of you out there who feel the same. So, I came across this quick 30 minute meal that I just had to share. It’s not only quick, but it is delicious and a nice healthy meal I can feed my family in under a half an hour. Delicious Living Recipe – Coconut Banana Pancakes

Ingredients

3 Eggs
4 cups Buttermilk, at room temperature
¾ cup Spectrum Naturals Organic Coconut Oil
4-½ cups All-Purpose Flour
¼ cup Sugar
2 tsp Salt
2 tsp Baking Soda
1 Tbsp Baking Powder
1-½ cup Ripe Banana, pureed
1-½ cup Coconut, shredded

Directions

Gently warm the coconut oil to liquefy it.
Whisk together the eggs, buttermilk and coconut oil.
Sift dry ingredients together.
Stir the wet ingredients into the dry ingredients.
Stir in the banana puree.
Stir in the coconut.
Cook the pancakes on a hot griddle or non-stick pan with butter or try Spectrum Naturals Super Canola Skillet Spray.

Makes 36 – 6 inch pancakes

Ingredients
  • 1 (15 Oz.) Pkg Pacific Organic Pumpkin
  • 1 (14 Oz.) Can Sweetened Condensed Milk
  • 2 Large Eggs
  • 1 tsp Organic Cinnamon, ground
  • ½ tsp Organic Ginger, ground
  • ½ tsp Organic Nutmeg, ground
  • ½ tsp Organic Sea Salt
  • 1 (9-Inch) Gluten Free Pie Crust, prepared
Instructions
  1. Preheat oven to 425°F.
  2. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth.
  3. Pour into crust.
  4. Bake 15 minutes.
  5. Reduce oven temperature to 350°F; bake an additional 35 to 40 minutes or until knife inserted 1-inch from crust comes out clean.
  6. Cool.
  7. Garnish as desired.

Ingredients
  • 1 Package Gluten Free Tortillas
  • 1 Tbsp Sunflower Oil
  • 10 Eggs, beaten
  • ½ Cup Soy or Rice Milk
  • ½ Cup Cream Cheese
  • 1 Package Applegate Breakfast Sausage, cooked, chopped
  • 2 Cups Yellow Bell Pepper, chopped, sauted
  • 1 Jar Full Circle Salsa
  • 1 Avocado, sliced
  • 2 (12 Ounce) Sour Cream
  • 1 (8 Ounce) Package Shredded Cheese
Instructions
  1. Preheat oven to 200ºF
  2. Place tortilla shells on pan and put it oven to warm while cooking egg mixture.
  3. In a large frying pan heat oil.
  4. Add eggs, milk, cream cheese.
  5. Using spatula, stir frequently.
  6. Stir in sausage and bell peppers.
  7. When done, take tortillas out of oven and scoop ⅛ of mixture onto each shell.
  8. Top with salsa, avocado, sour cream and shredded cheese.
  9. Roll up like a burrito.
  10. Serve warm.

Ingredients
  • 1 Tbsp. Butter
  • 1 Tbsp. Olive Oil
  • 1 Small Onion, chopped
  • 2 Cloves Garlic, minced
  • 2 Lbs. Fresh Spinach, washed and chopped
  • 1 (12 ounce) Package Firm Tofu
  • ½ Cup Milk or Soy Milk
  • 1 Cup Parmesan or Asiago cheese, shredded
  • To Taste Garlic Powder
  • To Taste Salt and Pepper
Instructions
  1. Place tofu, milk, cheese, garlic powder, salt, and pepper in a blender, and puree until smooth.
  2. Heat butter and olive oil in a large skillet over medium heat. Stir in onion and garlic; cook until soft and translucent, but not brown.
  3. Add spinach; cook, stirring frequently, until wilted.
  4. Stir pureed tofu into spinach.
  5. Cook until warmed through.
  6. Adjust seasonings, if desired, and serve.
