Meal #1 – Beef & Broccoli Stir-Fry


Beef & Broccoli Stir Fry
 
Ingredients
  • 1 Cup White Rice
  • 1 Lb. Sirloin Steak, sliced
  • 2 T Canola Oil
  • 1 T Ginger
  • 2 Cups Broccoli Florets
  • 3 T Soy Sauce
  • 3 T Rice Vinegar
  • ¼ Cup Roasted Peanuts (optional)
Instructions
  1. Cook rice according to package directions.
  2. Brown steak with large skillet over medium-high heat, 2 to 3 minutes; remove.
  3. Add ginger, broccoli, and 1 cup water to skillet. Cook, tossing, until tender, 6 to 8 minutes.
  4. Add steak, soy sauce, and rice vinegar; cook, tossing, until thickened, 1 to 2 minutes.
  5. Serve stir-fry over rice with roasted peanuts.

Meal #2 – Grilled Pork Chops


Grilled Sweet Potatoes
 
Ingredients
  • 4 T Butter, melted
  • 1 T Seasoning of choice
  • 2 Jumbo Sweet Potatoes, peeled and cut into wedges
Instructions
  1. Mix butter and seasoning in large bowl. Add sweet potatoes; toss to coat evenly.
  2. Place sweet potatoes in center of foil. Bring up sides of foil; double fold top and ends to tightly seal packet.
  3. Grill over medium-high heat 30 to 35 minutes or until potatoes are tender, turning packet over halfway through cook time.

Meal #3 – Chicken Slaw Wraps


Chicken Slaw Wrap
 
Ingredients
  • Chicken Burgers
  • Cole Slaw
  • Dressing
Instructions
  1. Grill chicken burgers according to the package directions.
  2. Let cool slightly before assembling wraps. Cut burgers into strips.
  3. Toss cole slaw with optional dressing if desired until well coated.
  4. Place about ½ cup of slaw in the center of each tortilla; add chicken.
  5. Fold in the ends and roll up like a burrito. Serve immediately with chips.

Meal #4 – Mexican Lasagna


Mexican Lasagna
 
Ingredients
  • 1 Lb. Ground Beef, cooked & shredded
  • 2 T Chili Powder
  • 2 tsp. Ground Cumin
  • 1 (4 oz) Can Green Chilis
  • 1 Cup Sour Cream
  • 1⅓ Cup Salsa
  • 14.5 Oz. Can Black Beans, drained and rinsed
  • 15.25 Oz. Can Corn, drained
  • 10 Tortillas, cut in half
  • 2 Cups Shredded Mexican Blend Cheese
  • 3 T Fresh Cilantro, chopped
  • 2 Tomatoes, diced
Instructions
  1. Pre-heat oven to 350°F. Grease 9x13 baking dish with non-stick spray; spread ⅓ cup of salsa on bottom of dish. Set aside.
  2. In large bowl, combine chili powder, cumin, green chilis, 1 cup salsa, sour cream, and 2 tbsp of chopped cilantro. Fold in beef.
  3. In a small bowl, combine corn and black beans. Set aside.
  4. Layer about 5 tortillas on bottom of baking dish-making sure you lay straight side of cut tortilla on the ends of the baking dish.
  5. Spread half of beef mixture over tortillas, then half of bean mixture followed by 1 cup of shredded cheese. Repeat layer. Cover with foil; bake for 40 minutes.
  6. Remove foil; bake for an additional 10-15 minutes.
  7. Top with diced tomatoes and remaining cilantro.

Meal #6 – Garlic & Rosemary Chicken


Garlic Rosemary Chicken
 
Ingredients
  • 6 Chicken Thighs, skinless & bone-in
  • Salt and Fresh Ground Pepper, to taste
  • 4 T Olive Oil
  • 3 T Rosemary, minced
  • 4 Garlic Cloves, minced
  • 1 Cup Grape Tomatoes, halved
Instructions
  1. Season chicken thighs with salt and pepper on all sides; set aside.
  2. Heat olive oil in large and heavy nonstick skillet or cast iron skillet over medium-high heat. Add rosemary and garlic to hot oil; cook for 1 minute or until fragrant.
  3. Add chicken thighs; cook uncovered for about 15 minutes. Use splatter screen if you have one. Turn chicken over and continue to cook for 10 to 15 minutes, or until internal temperature reaches 165 degree°F.
  4. Stir in the halved tomatoes 5 minutes before chicken is finished cooking. Remove skillet from heat when chicken is done. Let rest 5 minutes. Serve with rice or pasta, and/or salad.
