Meal #1 – One Pot Cheesy Taco Pasta


One Pot Cheesy Taco Pasta
 
Ingredients
  • 1.5 Lb. Ground Turkey
  • ½ tsp. Salt
  • Pinch of Black Pepper
  • 1 Packet Taco Seasoning
  • 2 Cups Water
  • 1 Cup Mild Salsa
  • 8 Oz. Rotini Pasta, uncooked
  • 1½ Cups Mexican-style Cheese, shredded
  • Optional toppings - Chopped Tomatoes, Avocado, Crushed Tortilla Chips, Cilantro
Instructions
  1. Preheat large deep skillet over medium heat. Add ground turkey; season with salt and pepper.
  2. Cook, stirring occasionally until cooked thoroughly; rinse meat.
  3. Stir taco seasoning into ground turkey then stir in water, salsa and pasta noodles.
  4. Bring mixture to a boil. Stir, cover and reduce heat to simmer. Cook for about 15 minutes until pasta is tender. Turn off heat and stir in cheese.
  5. Season with additional salt and pepper if needed. Serve with optional toppings if desired.

Meal #3 – Sheet Pan Beef Fajitas


Sheet Pan Beef Fajitas
 
Ingredients
  • 3 T Vegetable Oil, divided
  • 3 Bell Peppers, seeds removed, ¼-inch thick slices
  • 1 Yellow Onion, thinly sliced
  • 1 Lb. Beef Boneless Tri-Tip Sirloin Fillet, ¼-inch thick slices
  • 2 tsp. Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Garlic Powder
  • 1 tsp. Kosher Sea Salt
  • ½ tsp. Ground Black {epper
  • ½ tsp. Paprika
  • ½ tsp. Coriander
  • ⅛ tsp. Chili Flakes or Cayenne Pepper (optional)
  • 1 Lime or Lime Juice
Instructions
  1. Preheat oven to 400°F. Place standard size rimmed baking sheet in oven while it heats so that it’s nice and hot.
  2. In large bowl toss 1 tablespoon oil with bell peppers and onions. Carefully remove hot baking sheet from oven; spread peppers and onions evenly across sheet. Place in oven; bake for 8 minutes.
  3. Meanwhile, in same bowl, combine remaining oil along with meat, chili powder, cumin, garlic powder, salt, black pepper, paprika, coriander and chili flakes.
  4. Remove sheet from oven, drain off any excess liquid and add beef, making sure to separate the pieces of meat from each other.
  5. Return to oven; bake for 15-20 minutes or until vegetables are roasted.
  6. Remove, squeeze the lime juice over top and serve with desired toppings.

Meal #5 – Turkey Stuffed Peppers


Turkey Stuffed Peppers
 
Ingredients
  • 4 Large Red, Yellow or Green Peppers
  • 1.5 Lb. Ground Turkey Breast
  • ½ Cup Onion, chopped
  • 15 Oz. Can Tomato Sauce
  • 1 Cup Brown Rice, cooked
  • 1 Cup Whole Kernel Corn
  • 1 T. Chili Powder
  • 1 tsp. Garlic Salt
  • Hot Pepper Sauce, if desired
  • ½ Cup Shredded Cheddar Cheese
Instructions
  1. Heat oven to 350°F.
  2. Cut peppers in half lengthwise; remove seeds.
  3. In large saucepan, add enough water to cover peppers. Boil, covered, 3 minutes. Drain; rinse under cold water.
  4. Place peppers, cut-side up, in 13x9x2-inch baking dish.
  5. Cook turkey as specified on package. Always cook to well-done, (165°F) Stir in onion, tomato sauce, rice, corn, chili powder, garlic salt and hot pepper sauce, if desired.
  6. Generously stuff each pepper half with turkey mixture. Cover with foil and bake 25 minutes. Uncover and sprinkle cheese on each pepper. Bake 5 minutes or until cheese is melted.

Ingredients
  • 2 (5 oz.) Cans - Chunk Light or Albacore White Tuna, chunked and drained
  • 2 T Dried Chopped Onions
  • 2 T Mayonnaise
  • 1 T Pickle Relish or Celery, finely chopped
  • 8 Slices Bread
  • 4 Slices Deli Cheddar Cheese
Instructions
  1. In medium bowl, combine meat, mayonnaise, onion and celery; mix well.
  2. Top 4 of slices of bread with 1 slice cheese each. Spread tuna mixture over cheese slices and top with remaining bread slices.
  3. Spread each sandwich with additional mayonnaise; place in skillet. Cook on medium heat until lightly browned on both sides.
Notes
Tastes great with canned chicken too!
