Meal #1 – Bourbon Street Chicken


Bourbon Street Chicken
 
Ingredients
  • 5 Chicken Thighs
  • 2 Garlic Cloves, minced
  • 1 tsp. Ginger
  • ¼ Cup Apple Juice (prepared)
  • ⅓ Cup Brown Sugar, packed
  • 2 T Ketchup
  • 1 T Cider Vinegar
  • ¼ Cup Soy Sauce
  • Red Pepper Flakes (optional)
  • Green Onions, chopped
Instructions
  1. In a medium bowl, mix the garlic, ginger, apple juice, brown sugar, ketchup, cider vinegar and soy sauce together.
  2. Place the chicken thighs into the crockpot. Pour the mixed sauce into the crockpot and over the chicken, then use tongs to coat the chicken thighs in the sauce.
  3. Cook on high for 4 hours, until the chicken is tender.
  4. Sprinkle with red pepper flakes and chopped green onion on top. Serve over rice.

Meal #2 – Cheeseburger Quesadillas


Cheeseburger Quesadilla
 
Ingredients
  • 1 tsp. Butter
  • ½ Small Yellow Onion, chopped
  • 2 Lbs. Ground Beef
  • 1 T Worcestershire Sauce
  • 1 tsp. Salt
  • 1 tsp. Ground Black Pepper
  • ½ tsp. Garlic Powder
  • Cooking Spray
  • 8 (8 inch) Four Tortillas
  • 2 Cups Colby Cheese, shredded
  • 4 tsp. Ketchup, or to taste
  • 4 tsp. Yellow Mustard, or to taste
  • 4 tsp. Sweet Relish, or to taste (optional)
Instructions
  1. Heat butter in saucepan over medium heat; cook and stir onion until slightly tender, about 5 minutes.
  2. Add ground beef, Worcestershire sauce, salt, black pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. Remove from heat, drain liquid from beef, and let sit for 2 minutes.
  3. Heat griddle or flat pan over medium heat and spray with cooking spray. Place 1 tortilla on hot griddle, top with some of cheese, ¼ of beef mixture, 1 teaspoon ketchup, 1 teaspoon mustard, and 1 teaspoon relish. Top with more Colby cheese and 1 tortilla.
  4. Flatten quesadilla with your hand. Flip quesadilla with spatula; cook until browned and cheese is melted, 3 to 5 minutes more. Cut quesadilla into 4 pieces.
  5. Repeat with remaining tortillas, ground beef, cheese, ketchup, mustard, and relish.

Meal #3 – Roast Beef Ruben Sandwiches


Roast Beef Ruben Sandwiches
 
Ingredients
  • 6 T Thousand Island Dressing
  • 12 Slices Rye Bread
  • ½ Lb. Swiss cheese, 6 slices
  • 14 Oz. Can Sauerkraut, drained
  • ¾ Lb. Deli Roast Beef, thinly sliced
  • ¼ Cup Butter or Margarine, softened
Instructions
  1. Spread 1 tablespoon Thousand Island Dressing over each of 6 slices bread. Top with cheese, sauerkraut and roast beef. Top with remaining bread slices.
  2. Spread 1 teaspoon butter over each top slice of bread. Place sandwiches, butter sides down, in skillet. Spread remaining butter over top slices of bread. Cook uncovered over low heat about 10 minutes or until bottoms are golden brown. Turn; cook about 8 minutes longer or until bottoms are golden brown and cheese is melted.

Meal #6 – Quick Chicken Quesadillas


Quick Chicken Quesadillas
 
Ingredients
  • 5 Chicken Thighs, cooked & shredded
  • 8 6-inch Flour Tortillas
  • 1 Cup Colby-Jack cheese
  • ¼ Cup Salsa, prepared
Instructions
  1. Combine chicken, Colby-Jack cheese and salsa in bowl.
  2. Place pan on stove over low to medium heat. Spray with pan spray.
  3. Lay tortillas on preparation surface. Place 3 tbsp mixture on one half of each tortilla. Fold tortilla over into half moon shape and lightly press to flatten.
  4. Place quesadilla in pan and cook until lightly golden brown. Flip and allow other side to become lightly golden brown.
  5. Remove quesadillas from pan. Cut into triangles. Serve with side of refried bean an chips(optional).
