Meal #1 – Chicken & Avocado Ranch Burritos


Chicken & Avocado Ranch Burritos
 
Ingredients
  • 1 Lb. Chicken, boneless, skinless, cut into 1-inch chunks
  • 1.25 Oz. Taco Seasoning
  • 1 T Olive Oil
  • Flour Tortillas, 10 inches each
  • 2 Avocados, halved, peeled, seeded and diced
  • 1 Cup Mozzarella Cheese, shredded
  • ¼ Cup Sour Cream
  • ¼ Cup Ranch Dressing
  • ¼ Cup Fresh Cilantro, chopped
Instructions
  1. Heat olive oil in large skillet over medium heat. Season chicken with taco seasoning. Add chicken to skillet and cook until golden, about 3-4 minutes; set aside. Heat tortillas according to package instructions.
  2. Working one at a time, place chicken, avocado, cheese, sour cream, Ranch and cilantro in center of each tortilla. Bring the bottom edge of the tortilla tightly over the filling, folding in sides. Continue rolling until top of the tortilla is reached. Repeat with remaining tortillas. Heat grill pan over medium high heat. Add burritos and cook, pressing gently with a spatula, about 3-4 minutes per side, or until golden brown and cheese has melted. (This can also be baked at 375°F until heated through, about 15-18 minutes.
  3. Serve immediately.

Ingredients
  • 20 Oz. No Name Meatballs Original Or Wild Rice
  • 10.5 Oz. Cream of Mushroom Soup
  • 1 can French onion bouillon (or 1 cup beef bouillon)
  • 1 Cup Sour Cream
  • 1 tsp. Worcestershire Sauce
  • 1 dash Tabasco Sauce (optional)
  • ¼ Cup Milk
  • Cracked Black Pepper
  • 16 Oz. Egg Noodles
Instructions
  1. Mix sauce ingredients together and pour over meatballs.
  2. Cook on low until heated through.
  3. Serve over noodles or rice.

Meal #3 – Honey Garlic Shrimp With Rice & Broccoli


Honey Garlic Shrimp With Rice & Broccoli
 
Ingredients
  • 1 Lb. Shrimp
  • 1 T Garlic
  • 1 tsp. Ginger (optional)
  • ⅓ Cup Honey
  • ¼ Cup Soy Sauce
  • 2 tsp. Olive Oil
  • Green Onion, chopped for garnish (optional)
  • Broccoli (fresh or frozen)
  • Rice-A-Roni Long Grain Wild Rice
Instructions
  1. Whisk the honey, soy sauce, garlic, and ginger together in medium bowl. Place shrimp in large zipped-top bag. Pour ½ of marinade mixture on top; shake. Allow shrimp to marinate in refrigerator for 15 minutes or for up to 8-12 hours. Cover and refrigerate the rest of the marinade for later.
  2. Heat olive oil in skillet over medium-high heat. Place shrimp in skillet. (Discard used marinade.) Cook shrimp on one side until heated through-- about 45 seconds-- then flip shrimp over. Pour in remaining marinade and cook it all until shrimp is cooked through, about 1 minute more.
  3. Serve shrimp with cooked marinade sauce and garnish with green onion. Use reserved sauce over rice and steamed broccoli.

Meal #4 – Southwestern Chopped Salad With Ranch Dressing


Southwestern Chopped Salad
 
Ingredients
  • 1 Lb. Chicken, boneless, skinless, sliced horizontally
  • 2 tsp. Ground Cumin
  • 2 tsp. Chili Powder (mild, not overly spicy kind)
  • Salt, to taste
  • 1 Package Romaine Hearts, chopped
  • 1 Large Orange Bell Pepper, chopped
  • 2 Medium Tomatoes, chopped
  • 2 Avocados, chopped
  • 4 Green Onions, chopped
  • 15 Oz. Can Black Beans, rinsed and drained
  • 8.5 Oz. Corn, rinsed and drained
  • Buttermilk Ranch Dressing
Instructions
  1. Generously season the chicken breasts with salt, on both sides. Also, season both sides of chicken breast with ½ teaspoon of ground cumin and ½ teaspoon of chili powder (reserve the remaining 1.5 teaspoon of each cumin and chili powder for later).
  2. Grill chicken breast until the chicken is completely cooked through and no longer pink in the center. Slice the cooked chicken into stripes or cubes. Set aside.
Assembling the salad:
  1. Make sure lettuce, bell pepper, tomatoes, avocado, and green onions are all finely chopped. Rinse and drain canned black beans and canned corn.
  2. Add all salad ingredients, 1.5 teaspoon of ground cumin, and 1.5 teaspoon of chili powder to a large bowl and toss with the desired amount of Ranch dressing. Salt to taste and top each salad with cooked chicken.

Meal #5 – Pork Eggroll in a Bowl


Pork Egg Roll In A Bowl
 
Ingredients
  • 12 Oz. Ground Sausage
  • 14 Oz. Coleslaw Mix
  • 5 Cloves Garlic, minced
  • ½ Cup Soy Sauce
  • 1 tsp. Ginger
  • Green Onion, sliced
Instructions
  1. In large, deep skillet, brown sausage. Meanwhile in small bowl, combine garlic, soy sauce, and ginger; set aside.
  2. Once sausage is cooked through, add dry coleslaw mix to skillet and stir to combine.
  3. Pour soy sauce mixture into the skillet and stir, continuing to cook over medium heat for about 5 minutes or until cabbage is wilted, but still a bit crunchy. Serve with sliced green onion.

Instructions
