Meal #1 – Chicken Patties, Baked Beans & Potatoes

What You’ll Need:

  • 2 Lb. Gold’n Plump Frozen Seasoned Chicken Patties – $5.00

Meal #2 – Grilled Turkey Meatloaf, Baked Potatoes & Asparagus


Grilled Turkey Meatloaf
 
Ingredients
  • 16 Oz. Pkg. Jennie-O Lean round Turkey
  • ⅓ Cup Finely Chopped Onion
  • ⅓ Cup Seasoned DryBreadcrumbs
  • ⅔ Cup Chili Sauce, divided
  • ¼ Cup Egg Substitute or 1 Egg
  • ½ tsp. Dried Sage Leaves
  • 2 Tbsp Packed Brown Sugar
  • 1 Tbsp Dijon Mustard (or mustard of your choice)
Instructions
  1. In large bowl, combine turkey, onion, breadcrumbs, ⅓ cup chili sauce, egg and sage; mix well. On large plate, shape mixture into 8 x 4-inch oval loaf about 1½-inches thick. Cover and chill 30 minutes or up to 8 hours.
  2. Prepare grill. Using large spatulas, place loaf on oiled rack of grill over medium heat. Grill, covered, 12 minutes. Combine remaining ⅓ cup chili sauce, brown sugar and mustard; mix well. Carefully turn loaf over; brush top with chili sauce mixture. Continue to grill, covered, 14-16 minutes longer or until the internal temperature reaches 165ºF as measured by meat thermometer. Using clean spatulas, transfer loaf to plate. Let stand 5 minutes before slicing.

Meal #3 – Italian Sausage Stir Fry


Italian Sausage Stir Fry
 
Ingredients
  • 2 Small Heads of Broccoli, cut into florets
  • 19 Oz. Italian Sausage
  • 2 Red Bell Peppers, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Can of Fire Roasted Diced Tomatoes
  • 2 Tbsp of Olive Oil
  • Italian Seasoning
  • Salt and Pepper
Instructions
  1. Cook sausage in frying pan (lid on) with ½ inch of water. Simmer on medium-low until water cooks out turning several times.
  2. Cut peppers into strips and broccoli into florets. Put olive oil on medium heat in separate pan/pot/dutch oven. Saute peppers until more tender. Add broccoli and cook until more tender stirring frequently. Add fire roasted diced tomatoes and seasoning; turn heat down.
  3. Drain sausage and cut into ½ inch slices. Add to vegetables and stir.
  4. Serve hot.

Meal #7 – One-Pan Chicken Thighs With Cilantro-Lime Black Bean Rice


One-Pan Chicken Thighs with Cilantro-Lime Black Bean Rice
 
Ingredients
  • 1 Tbsp Olive Oil
  • 4 Chicken Thighs
  • Salt and Pepper
  • 2 Cups Chicken Broth
  • ½ Cup Water
  • 1 Cup Uncooked Long Grain Brown Rice (or any rice that says on the package that it takes 15 minutes to cook it)
  • ¼ tsp. Salt
  • 4 Garlic Cloves, minced
  • 2 Tbsp Lime Juice (use one 1 tablespoon first, before adding another)
  • 1 Can (14.5 oz) Black Beans, rinsed, drained
  • ¼ to ½ Cup Fresh Cilantro, chopped
Instructions
  1. Heat large skillet on medium-high heat until hot. Add olive oil - it should run easily because the skillet is hot, but not sizzle or smoke. Season skin side of chicken thighs with salt and pepper. Sear meat on high-medium heat in skillet, skin-side down, for 5 minutes until skins get golden brown color but don’t get burned. Skillet should not be burned on bottom. Flip chicken; sear for 2 more minutes on medium heat. Remove chicken from skillet (it will not be cooked through - you’ll continue cooking it in next steps).
  2. In same (now empty) skillet, add chicken broth, water, uncooked rice, ¼ teaspoon salt and minced garlic. Bring to boil. Mix everything well. Put chicken on top, making wells for them in rice. Reduce the heat to low boil simmer. Cover skillet with lid; simmer for 15-20 minutes, covered, until rice is cooked through, and chicken is completely cooked (no longer pink in center).
  3. Remove chicken from skillet. Mix in 1 tablespoon of lime juice, rinsed and drained black beans, and fresh cilantro into cooked rice. Taste, and add more salt and/or another small amount of lime juice (at most 1 extra tablespoon, try adding half of extra tablespoon first).
