Meal #1 – Panini Burgers & Fresh Veggies


Panini Burger
 
Ingredients
  • 4 Beef Burgers
  • 4 Slices Pepper Jack Cheese
  • 8 Slices English Muffin Bread
  • ⅓ Lb. Tomato
Instructions
  1. Grill burger to desired doneness.
  2. Spread margarine on 2 slices of bread.
  3. Place burger, cheese and slices of tomato between two slices of bread.
  4. Cook on panini press or stovetop
How to Cook Panini:
In a panini press:
  1. Preheat the press.
  2. Add your sandwich and cook according to the manufacturer’s instructions until golden and crisp, 3 to 5 minutes.
On the stove:
  1. Preheat a skillet with butter or oil to medium low.
  2. Add your sandwich, then press a heavy pan on top to weigh it down.
  3. Cook until golden and crisp, 3 to 4 minutes per side.

What You’ll Need:

Meal #3 – Shredded Rotisserie Chicken Parm Casserole


Shredded Rotisserie Chicken Parm Casserole
 
Ingredients
  • 1 Rotisserie Chicken, shredded
  • 1 Lb. Pasta, cooked al dente
  • 24 Oz. Jar Spaghetti Sauce
  • 8 Oz. Mozzarella Cheese, shredded
  • 2 Tbsp Olive Oil
  • Salt & Pepper
Instructions
  1. Preheat oven to 350°F.
  2. Place your cooked pasta into a 9x13 baking dish. Drizzle olive oil over pasta.
  3. Lay your shredded chicken on top of the pasta.
  4. Pour spaghetti sauce over pasta. Top with mozzarella cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Uncover for the last five minutes.
