Meal #3 – Grape & Chicken Wild Rice Salad
With French Bread


Grape & Chicken Wild Rice Salad

Ingredients
  • 1 Lb. Gold’n Plump® Boneless Skinless Chicken Breasts
  • 4 Cups Cooked Wild Rice
  • ½ Cup Thinly Sliced Green Onion
  • 1 Can (8 Oz.) Water Chestnuts, drained
  • 1-1/2 Cup Halved Seedless Green Grapes
  • ⅔ Cup Slivered Almonds or Cashews (optional)
Dressing (whisk together; chill):
  • ½ Cup Mayonnaise
  • ¼ Cup Milk
  • 1 tsp Lemon Juice
  • ¼ tsp Tarragon (optional)
Instructions
  1. Cook chicken according to package directions. Cool and cut in to ½-inch cubes. Cook wild rice according to package directions to yield 4 cups rice.
  2. In large bowl, toss salad ingredients, except grapes and cashews. Add dressing; toss. Just before serving, fold in grapes and almonds.

Meal #4 – Shredded Pork Loin Nachos
& Watermelon


Shredded Pork Nachos

Ingredients
  • Hormel Pork Loin Filet
  • Tortilla Chips
  • Desired Toppings (Tomatoes, Green Onions, Shredded Cheese, Sour Cream, etc...)
Instructions
  1. Place pork loin in crockpot. Cook on low for 6-8 hours.
  2. Shred pork loin. Depending on your mood, add taco seasoning (according to package directions) or mix your favorite bbq sauce.
  3. Spread tortilla chips on a plate. Place pork over top of chips. Garnish with toppings of your choice

Meal #5 – Cheesy Weiner Wraps & Chili


Cheesy Weiner Wraps & Chili
 
Ingredients
  • 8 Wieners
  • 1 Can Chili
  • 1 tsp Garlic power
  • 1 tsp Parsley
  • 1 Can Crescent Dough
  • ¼ Cup Butter
  • 4 Slices Cheddar Cheese
Instructions
  1. Preheat oven to 375°F.
  2. Roll out each crescent dough triangle and place wiener and half a slice of cheese on top of dough.
  3. Roll up and place seam-side down in a greased glass cake pan. To avoid doughy bottom, place the wraps in pan first and then pour chili around them before baking.
  4. Bake in oven for 20-25 minutes or until the dough is cook and golden brown.
  5. Mix garlic and parsley with melted butter and brush on top of each wrap. Serve warm.

Hawaiian Ham & Swiss Sliders

Ingredients
  • 16 Oz. Ham Lunchmeat
  • 6 Slices of Swiss Cheese, cut into fourths
  • ⅓ Cup Mayonnaise
  • 1 Tbsp Poppy Seeds
  • 1½ Tbsp Dijon Mustard
  • ½ Cup Butter, melted
  • 1 Tbsp Onion Powder
  • ½ tsp Worcestershire Sauce
  • 1 Package (12 count) KING’S HAWAIIAN Original Hawaiian Sweet Dinner Rolls
Instructions
  1. Cut rolls in half and spread mayo onto 1 side of the rolls.
  2. Place a slice or two of ham and slice of swiss cheese in roll.
  3. Replace the top of the rolls and bunch them closely together into a baking dish.
  4. In a medium bowl, whisk together poppy seeds, dijon mustard, melted butter, onion powder and worcestershire sauce. Pour sauce over the rolls, just covering the tops.
  5. Cover with foil and let sit for 10 minutes.
  6. Bake at 350°F degrees for 10 minutes or until cheese is melted.
  7. Uncover and cook for additional 2 minutes until tops are slightly browned and crisp. Serve warm.

Cheesy Tex Mex Quesadillas

Ingredients
  • 1 Tbsp Olive Oil, divided
  • 1 Lb. Gold’n Plump® Boneless Skinless Chicken Breasts
  • 16 Oz. Salsa
  • 8 Oz. Shredded Mexican Style Queso Quesadilla Shredded Cheese
  • 6 (6-inch) Flour Tortillas
Instructions
  1. Heat oil in large skillet over medium-high heat. Cook (or grill chicken) 7 to 8 minutes per side or until lightly browned and no longer pink in center.
  2. Lay 3 tortillas out on work surface. Sprinkle each with ¼ cup cheese, top with a chicken, a spoonful of salsa, and another ¼ cup cheese. Lay remaining tortillas on top.
  3. Carefully transfer first tortilla stack to the large skillet, over medium heat. Toast for about 2 minutes; turn over with a wide spatula. Toast 2 to 3 minutes longer or until tortillas are golden brown and cheese is melted. Repeat with remaining tortilla stacks. Serve quesadillas with any remaining salsa & chopped green onions.
