Meal #1 – Grilled Hamburgers with Avocado, Baked Beans & Salad

What You’ll Need:

Meal #2 – Cheesy Avocado Quesadillas


Cheesy Avocado Quesadillas
 
Ingredients
  • 1 Tbsp Olive Oil
  • 1.5 Lb. Ground Turkey
  • 1 Tbsp Taco Seasoning Mix
  • 1 (4.5-ounce) Can Chopped Green Chiles, drained
  • 8 (8-inch) Flour Tortillas for Burritos
  • 1 (16 Oz.) Can Refried Beans, heated
  • 2 Avocados, peeled, halved, seeded and sliced
  • 2 Cups Shredded Mozzarella Cheese
  • 2 Tbsp Chopped Fresh Cilantro Leaves
Instructions
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Heat olive oil in a medium skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks.
  3. Drain excess fat and stir in taco seasoning and green chiles; set aside.
  4. Top tortilla with refried beans, turkey mixture, avocado and mozzarella, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.
  5. Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes. Serve immediately, garnished with cilantro, if desired.

Meal #6 – Feta Basil Turkey Burgers with Cucumbers & Watermelon


Feta Basil Turkey Burgers
 
Ingredients
  • 1.5 Lb. Ground Turkey
  • ½ Cup Feta Cheese Crumbles
  • 4 Tbsp Chopped Fresh Basil
  • 1 tsp Worcestershire Sauce
  • ½ tsp Salt
  • Black Pepper
  • 4 Hamburger Buns
  • Desired Toppings (red onion, lettuce, tomatoes, condiments, etc)
Instructions
  1. Using a gentle touch, mix together the ground turkey, feta crumbles, chopped basil, worcestershire sauce, salt, and pepper with your fingertips. Make sure not to overwork the meat, just distribute all the ingredients throughout the meat. Shape turkey meat into patties.
  2. Heat grill; add turkey patties and cook for about 3 minutes on each side. Time will vary depending on how hot your grill is and how thick your patties are, but you want the center of the turkey burger to read at 165 degrees F.
  3. Serve the turkey burgers with desired toppings and enjoy!
