Meal #1 – Slow Cooker Pork Riblets
With Bacon Caesar Salad & Strawberries


Slow Cooker Pork Riblets
 
Ingredients
  • 2 Lbs. Pork Riblets
  • 1 Large Onion, chopped
  • Seasoning Salt
  • BBQ Sauce to Taste
Instructions
  1. Place riblets on a foil covered baking sheet.
  2. Sprinkle seasoning salt over meat on both sides.
  3. Broil for 5 to 8 minutes until meat starts to brown.
  4. While broiling, chop onions and place in slow cooker on medium power.
  5. Place ribs into crock pot once browned.
  6. Cover and cook on low for 4 hours.
  7. Just before serving, pour desired amount of sauce over ribs and enjoy!

Meal #2 – Roasted Lemon Garlic Chicken
With Baked Potatoes & Sautéed Mushrooms


Roasted Lemon Garlic Chicken
 
Ingredients
  • 10 Chicken Drumsticks, skin removed
  • 1 Large Lemon, juiced and zested
  • ¼ Cup Olive Oil
  • 2 tsp Garlic Powder
  • 2 tsp Salt
  • ½ tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
Instructions
  1. Rinse chicken and pat dry. Place into a 1-gallon Ziploc bag.
  2. In a small bowl, whisk together remaining ingredients. Pour over chicken and seal the bag, squeezing out as much air as possible. Massage marinade into the chicken. Refrigerate for at least 2 hours, or preferably overnight.
  3. When ready to cook, let chicken come to room temperature (about 20 minutes). Preheat oven to 425 degrees. Arrange chicken on a foil lined baking sheet. Bake, uncovered, for about 20-25 minutes. Flip chicken pieces and cook another 10 minutes.
  4. Serve immediately.

Meal #6 – Pork Riblets With Sweet Apricot Sauce & Baked Potatoes


Pork Riblets With Sweet Apricot Sauce
 
Ingredients
  • 1 Tbsp Butter
  • ¾ Cup Onion, chopped
  • 2 tsp. Fresh Garlic, finely chopped
  • ⅓ Cup Soy or Teriyaki Sauce
  • ¼ Cup Brown Sugar, firmly packed
  • ¼ Cup Dark Molasses
  • ¼ Cup Honey
  • 14 Oz. Ketchup
  • ¼ tsp. Crushed Red Pepper
  • ½ tsp. Worcestershire sauce
  • 3 Drops Hot Pepper Sauce
  • 12 Oz. Apricot Preserves
  • 3 Lbs. Pork Riblets
Instructions
  1. Place butter in a large sauté pan over medium heat, add onion and garlic once butter begins to sizzle.
  2. Sauté mixture for 4 minutes; add soy sauce, sugar, molasses, honey, ketchup, red pepper, Worcestershire sauce and hot pepper sauce.
  3. Cook mixture over low heat for 20 minutes, stirring occasionally to prevent sticking; set aside to cool.
  4. Meanwhile preheat oven to 400°F and spray baking sheet with cooking spray.
  5. Once cool, add apricot preserves to sauce and stir to combine.
  6. Place riblets onto baking sheet and bake for 15 minutes.
  7. Remove riblets from oven, place in bowl and pour in sauce.
  8. Stir mixture to coat and then place on sprayed baking sheet and bake for additional 40 minutes or until cooked through.

Meal #7 – Honey Lemon Garlic Chicken With Blue Cheese Potato Salad & Cherries


Honey Lemon Garlic Chicken
 
Ingredients
  • 5 Bone In, Skin On Chicken Thighs (About 2 Lbs.)
  • Salt to Taste
  • ½ Cup Honey
  • ¼ Cup Fresh Squeezed Lemon Juice (or juice of 1 lemon)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Rice Wine Vinegar
  • 2 Heaping Tbsp Minced Garlic
  • 6 Whole Garlic Cloves, peeled
  • Lemon Slices and Zest to Garnish
  • Sliced Green Onions, to garnish
Instructions
  1. Preheat oven to 360°F.
  2. Place chicken thighs in a large shallow dish and season with salt; set aside.
  3. In a large mixing jug, whisk together honey, lemon juice, soy sauce, vinegar and minced garlic. Pour about ¼ cup of sauce over chicken (or just enough to lightly coat each thigh) and rotate each thigh to coat evenly in sauce.
  4. Heat an oven-proof skillet over medium high heat; sear the chicken skin side down first until golden for about 5 minutes. Turn and repeat on other side. Drain most of excess oil from pan, leaving about 1 tablespoon for added flavor.
  5. Arrange chicken skin-side up in pan; add whole garlic cloves between chicken; pour half of remaining sauce over each thigh (about 1-2 tablespoons per thigh) and bake for 40-45 minutes until chicken is cooked through and juices run clear. The skin should be crispy and sticky.
  6. While chicken is baking, pour remaining sauce into a small pot (or saucepan), and bring to a boil over medium-high heat.
  7. Reduce heat down to low and allow to simmer while occasionally stirring; lifting pot off of heat when sauce bubbles up to rim, and repeat process until sauce has sightly reduced and thickened (about 6 minutes).
  8. Serve with remaining sauce, lemon zest and slices, and sliced green onions (optional).
