Meal #1 – Special Roast Chicken With Pasta Salad & Watermelon


Special Roast Chicken
 
Ingredients
  • 8 Pieces Chicken, skin on and bone-in preferable
  • 2 T. Soy Sauce
  • 1 T. Light Brown Sugar
  • 2 T. Red Wine Vinegar
  • 3 T. Olive Oil
  • 1 Medium Onion, chopped
  • 2-3 Cloves of Garlic, minced
  • Fresh Parsley
  • Salt and Pepper
Instructions
  1. Preheat oven to 425°F.
  2. In a large baking dish, combine marinade and toss with chicken.
  3. Season well.
  4. Place chicken pieces skin side up and roast for 30 minutes until it begins to brown.
  5. Remove and baste with marinade.
  6. Flip pieces and bake a remaining 10 minutes or until chicken is cooked through.
  7. Garnish with fresh parsley.

Meal #2 – Easy Turkey Broccoli Pasta With Dinner Rolls


Easy Turkey Broccoli Pasta Salad
 
Ingredients
  • 16 Oz. Rotini Pasta
  • 8 Oz. Broccoli Florets, cut into bite-sized pieces
  • 3 T. Olive Oil, divided
  • 1.5 Lbs. Ground Turkey
  • ½ tsp. Paprika
  • 4 Cloves Garlic, minced
  • ½ tsp. Crushed Red Pepper Flakes
  • ½ tsp. Salt
  • ¼ Cup Grated Parmesan Cheese
Instructions
  1. Cook pasta according to package directions.
  2. During last minute of cooking, add broccoli.
  3. Drain broccoli and pasta and return to pot.
  4. Cover and set aside.
  5. Heat 1 tablespoon olive oil over medium high heat.
  6. Add turkey, paprika, garlic, red pepper flakes and salt.
  7. Break turkey into pieces while cooking, until browned.
  8. Add turkey mixture and remaining olive oil to pasta.
  9. Mix until combined.
  10. Sprinkle with Parmesan cheese when serving.

Meal #6 – Roast Chicken With Potatoes & Lemon


Roast Chicken With Potatoes & Lemon
 
Ingredients
  • 1½ Lbs. Red Potatoes, halved
  • 3 T. Butter, cut into small pieces
  • Coarse Salt and Ground Pepper
  • 1 Package Cut-Up Whole Chicken (about 3 pounds)
  • 1 Lemon, cut into 8 wedges
  • ¾ tsp. Ground Thyme (or 6 sprigs fresh thyme)
Instructions
  1. Preheat oven to 475°F.
  2. Place potatoes and half the butter in a roasting pan; season with salt and pepper.
  3. Roast, tossing once, until potatoes are golden, 20 to 25 minutes.
  4. Place chicken, skin side up, on top of potatoes; season with salt and pepper.
  5. Roast until chicken begins to brown, about 20 minutes.
  6. Scatter lemon, remaining butter, and thyme around chicken.
  7. Roast until chicken is opaque throughout, 5 to 15 minutes.
  8. Serve chicken, vegetables, and lemon drizzled with pan juices.

Ingredients
  • 1 Lb. - 1.5 Lbs. Ground Turkey or Beef
  • 1 Medium Onion, chopped
  • 10.5 Oz. Cream of Mushroom Soup
  • 10.5 Oz. Cream of Chicken Soup
  • ½ Cup Milk
  • 16 Oz. Frozen Mixed Vegetables
  • 16 Oz. Frozen Tater Tots
  • 8 Oz. Shredded Cheddar Cheese
Instructions
  1. Preheat oven to 350°F
  2. Brown ground beef with onion; drain off any fat.
  3. Stir in soups, milk, and vegetables.
  4. Transfer mixture to a 9 x 13” baking dish.
  5. Arrange tater tots on top.
  6. Bake about 30 minutes, or until the mixture is bubbly and tater tots are brown and crisp.
  7. Sprinkle cheese over tater tots, return dish to oven, and bake an additional 10-15 minutes or until cheese is melted.
