MEAL ONE:

One-Pan Baked Chicken & Sweet Potatoes

This recipe is fantastic and super easy to make.

One-Pan Baked Chicken & Sweet Potatoes

Ingredients
  • ½ Cup Kraft Zesty Italian Dressing
  • 3 T. Brown Sugar
  • ¾ tsp. Dried Thyme
  • 1.5 Lbs. Sweet Potatoes (about 3), cut into ¾”-wide wedges
  • 1 Broiler Fryer Chicken, cut into 8 pieces
Instructions
  1. Heat oven to 375°F.
  2. Mix dressing, sugar and thyme in large bowl.
  3. Add potatoes; toss to coat.
  4. Transfer potatoes to 15x10x1-inch pan, reserve dressing mixture in bowl.
  5. Add chicken to reserved dressing mixture; toss to coat.
  6. Place in pan with potatoes.
  7. Bake 1 hour or until potatoes are tender and chicken is done to 165°F.
  8. Transfer chicken and potatoes to platter.
  9. Strain drippings from pan; pour strained sauce over chicken.

These stuffed pork chops are simply amazing!

MEAL SIX:

Baked Chicken With Tomato & Pea Pod Pasta

These two recipes go so great together! And both of them are easy to make.

Italian Baked Chicken
 
Ingredients
  • 8 Piece Bone-in Chicken
  • ⅓ Cup Olive Oil
  • ½ tsp Salt
  • ½ tsp Garlic Powder
  • Freshly Ground Black Pepper
  • 2 to 2½ Cups Italian Breadcrumbs
Instructions
  1. Preheat oven to 375°F.
  2. Line a large, rimmed baking sheet with heavy-duty aluminum foil.
  3. Prepare chicken by removing skin, if desired.
  4. In a medium bowl, combine olive oil, salt, garlic powder, and pepper.
  5. In another bowl or shallow dish, measure out 2 cups of Italian breadcrumbs.
  6. Dip a piece of chicken in the olive oil mixture, coating it on all sides.
  7. Place chicken in breadcrumbs and turn and press it into crumbs until evenly breaded.
  8. Place on baking sheet.
  9. Repeat with remaining chicken pieces.
  10. Bake for 40 minutes.
  11. Using a metal spatula and/or tongs, carefully turn each piece of chicken over and bake for an additional 10 to 20 minutes, or until chicken is done (reaching an internal temperature of 165°F).
Notes
Since Bone-In Chicken Breasts white meat cooks faster than dark, check for doneness sooner.

Tomato & Pea Pod Pasta
 
Ingredients
  • 10 Oz. Pasta of your Choice
  • ½ tsp. Salt for Boiling Pasta
  • 6-8 Oz. Fresh Snow Peas
  • 1 Cup Cherry Tomatoes, halved
  • 3 Tbsp Olive Oil
  • ¼ tsp. Salt
  • ¼ tsp. Black Pepper
Instructions
  1. Boil water in a large skillet, sprinkle ½ teaspoon salt and toss in pasta.
  2. Add 1 tablespoon olive oil in and cook for 7 minutes.
  3. Drain, leaving about ¼ cup of water; set aside.
  4. Boil new water in same skillet for peas.
  5. Drop peas in boiling water and cook until tender but still a bit firm, about 5-10 minutes.
  6. Drain and transfer into very cold water.
  7. Drain, set aside.
  8. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  9. Add the halved cherry tomatoes, cover skillet and cook tomatoes until slightly tender, about 5 minutes, stirring a few times.
  10. Season with salt and black pepper.
  11. Add pasta, peas and ¼ cup water from pasta.
  12. Stir and remove from heat.
  13. Serve warm or cold.

Creamy Tuna Primavera

This tasty meal is quick and easy to make. It’s a great meal for busy nights.

Creamy Tuna Primavera

Ingredients
  • 1¾ Cups Milk
  • 1½ Cups Hot Water
  • 3 Tbsp Butter Or Margarine
  • 1 Box Tuna Helper™ Creamy Broccoli
  • 1 Cup Carrots, cut into ⅛-inch slices
  • 2 Cans (5 oz each) Tuna, drained
  • 1 Cup Frozen Sweet Peas, thawed, drained
  • 1 Jar (4.5 oz) Sliced Mushrooms, drained, if desired
Instructions
  1. In 12-inch skillet, heat milk, hot water, butter, uncooked pasta and sauce mix (from Tuna Helper box), carrots and tuna to boiling over high heat, stirring occasionally.
  2. Reduce heat; cover and simmer 5 minutes, stirring occasionally.
  3. Stir in peas and mushrooms.
  4. Cover; simmer about 5 minutes or until vegetables are tender.
  5. Remove from heat; let stand covered 5 minutes (sauce will thicken as it stands).
