MEAL ONE:

Mediterranean Grilled Cheese Sandwich & Tomato Soup

Grilled cheese is always tasty, and this spin on the traditional is no exception!

Mediterranean Grilled Cheese
 
Ingredients
  • 8 Slices Bread of your Choice
  • 4 T. Butter
  • 4 Oz. Crumbled Feta Cheese
  • 12 Red Onion Rings
  • 1 Cup Kale, stems removed or Romaine Lettuce
  • 8 T. Sliced California Black Ripe Olives
Instructions
  1. Butter bread. Set four pieces, butter side down in a skillet over stovetop.
  2. Place cheese, onion, tomato, kale, and olives on top of bread and then place the other piece of bread overtop, butter side up.
  3. Cook until bread is slightly browned and then carefully flip over so that the other piece of bread cooks and cheese is slightly melted.

What You’ll Need:

MEAL TWO:

Creamy Parmesan Mushroom Chicken

This recipe is simply fantastic! Use your favorite seasonings and it’s sure to be a winner.

Creamy Parmesan Mushroom Chicken

Ingredients
  • 1 Lb. Skinless, Boneless Chicken Breast Halves (about 4 breast halves)
  • 1 Tbsp Vegetable Oil
  • 10 Ounces Sliced Baby Portobello or White Mushrooms
  • 1 Medium Onion, chopped (about ½ cup)
  • ⅓ Cup Dry White Wine
  • 1 Pouch (11 ounces) Campbell's® Creamy Parmesan Chicken
Instructions
  1. Season chicken as desired. Heat oil in a 10-inch skillet over medium-high heat. Add chicken and cook until well browned on both sides. Remove chicken from skillet.
  2. Add mushrooms and onion to skillet and cook until tender, stirring occasionally.
  3. Stir in wine and heat to a boil, stirring to scrape up any browned bits from bottom of skillet. Stir in sauce. Return chicken to skillet. Reduce heat to low. Cover and cook for 5 minutes or until chicken is cooked through. Season to taste.

Italian Asparagus
 
Ingredients
  • 1 Cup Fresh Sliced Mushrooms
  • ¼ Cup Italian Dressing
  • 1 tsp Lemon Juice
  • 1 Lb. Fresh Asparagus Spears, ends removed
  • 2 Tbsp Sliced Almonds
Instructions
  1. Mix mushrooms, dressing and lemon juice in large nonstick skillet; cook on medium heat 3-5 minutes or until mushrooms are tender, stirring frequently.
  2. Top with asparagus; cover.
  3. Reduce heat to medium-low; simmer 5 minutes or until asparagus is crisp-tender.
  4. Sprinkle with almonds and serve hot.

Crock Pot Hawaiian Chicken

Here’s a great slow cooker recipe that will bring your taste buds on an island getaway!

Ingredients
  • 1 Lb. Boneless Skinless Chicken Breasts
  • 8 Oz. Can Crushed Pineapple, drained
  • 16 Oz. Bottle Barbecue Sauce
Instructions
  1. Place chicken in a greased 3.5-5 Qt. Crock Pot
  2. Combine drained pineapple and BBQ sauce in a bowl and pour over meat.
  3. Cook on high heat for 3-4 hours or on low heat for 6-8 hours
  4. Serve over rice.

Oven Roasted Baby Red Potatoes
 
Ingredients
  • 3 Lbs. Baby Red Potatoes, unpeeled
  • 2 Tbsp Extra Light Olive Oil
  • 1½ tsp Dry Parsley
  • 1 tsp Sea Salt or ¾ tsp Table Salt
  • ½ tsp Freshly Ground Pepper
  • 2 Cloves Garlic, pressed
Instructions
  1. Cut potatoes into 1" to 1½" pieces. Place them in a large pot half full with warm water. Bring potatoes to a boil and cook for 7-9 minutes. Drain, cover to keep warm, and set aside
  2. In a large bowl, mix together remaining ingredients. Add potatoes and toss to coat.
  3. Transfer potatoes to a large rimmed, non-stick baking pan and place cut side down. Bake at 425° for 20 minutes or until the sides facing the pan are golden. Transfer to a serving bowl and serve.

This slow cooker recipe makes a great family dinner that tastes amazing.

Slow Cooker Seasoned Chicken With Potatoes & Green Beans
 
Ingredients
  • 2 Lbs Boneless Skinless Chicken Breasts
  • ½ Lb. Fresh Green Beans, trimmed (about 2.5 cups)
  • 1.25 Lb. Diced Red Potatoes (about 4 cups)
  • ⅓ Cup FRESH Lemon Juice
  • ¼ Cup Olive Oil
  • 1 tsp. Dried Oregano
  • 1 tsp. Salt
  • ¼ tsp. Pepper
  • ¼ tsp. Onion Powder
  • 2 Garlic Cloves, minced
Instructions
  1. Placing chicken in 6-quart slow cooker followed by green beans and potatoes.
  2. In medium bowl, whisk together remaining ingredients and pour into crock pot.
  3. Cover and cook on HIGH for 4 hours, without opening lid.
Notes
Do NOT use lemon juice out of squeeze bottle.

Instructions
