MEAL ONE:

Baked Chicken Legs & Veggies

Serve this awesome chicken with your favorite veggies.

The Best Baked Chicken Legs
 
Ingredients
  • 2.5 – 3 Lbs. Chicken Legs
  • ¾ Cup Honey
  • ½ Cup Soy Sauce
  • ¼ Cup Ketchup
  • 2-3 Cloves Garlic
  • Salt & Pepper
Instructions
  1. Preheat oven to 350 degrees. Lay chicken legs out and give them a good sprinkling of salt and pepper on both sides. Put them in a foil-lined baking dish with high sides. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
  2. In a glass measuring cup measure out honey, soy sauce and ketchup. Add minced garlic and stir. If mixture doesn’t combine well microwave it on high for thirty seconds and stir again. Pour honey mixture over chicken legs.
  3. Put chicken legs in the oven and bake for 45 minutes. Take chicken out of oven and flip each piece, then return to oven. Raise heat to 425 degrees and bake until sauce is bubbly and starts to caramelize on chicken legs. (About 15 minutes). Remove chicken from oven and allow to rest for 5 minutes before serving.

MEAL TWO:

BBQ Chicken Wings & Homemade Fries

This homemade fries recipe is fantastic! They go great with BBQ wings.

Homemade Fries
 
Ingredients
  • 2 T. Seasoned Salt
  • 1 tsp. Chili Powder
  • 1 tsp. Dried Basil
  • ⅛ tsp. Cumin
  • ⅛ tsp. Black Pepper
For the Fries
  • 3 Medium Russet Potatoes
  • 1-2 T. Olive Oil
Instructions
  1. Combine seasoning ingredients in a small bowl; set aside.
  2. Wash and peel potatoes. Cut off ends. With a very sharp knife, cut potatoes into thin slices about ¼ inch wide.
  3. Add fries to a large bowl and cover with cold water. Allow them to soak for at least 30 minutes (they can soak for as long as overnight. Place in refrigerator if soaking for more than 1 hour.)
  4. After fries have soaked, drain, rinse, and lay fries on a paper towel lined cooling rack to dry while you preheat oven to 400 degrees. Blot tops with additional paper towels to absorb any excess moisture.
  5. Line a baking pan with foil and spray with non-stick spray. Make sure the previously used bowl is dry and add potatoes to it. Add 1-2 tablespoons of oil and ½ – 1 Tablespoon of seasoning mixture based on how much salt you prefer. Toss around to mix.
  6. Evenly line baking pan with fries in a single layer. Don’t overlap or they won’t cook properly. Bake for about 30 minutes, flipping with a spatula once or twice after 15 minutes of cooking. Increase heat to 425 degrees and continue baking until edges look a little burnt!
  7. Sprinkle fries with the other half of seasoning mix. Serve immediately.
