This year is going by so fast it’s hard to believe it’s already March! Daylight Savings, St. Patrick’s Day and the first day of Spring are all coming up fast! Luckily we have more great meal plans to help save you time and money during this busy month! 

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. MEAL ONE:

Grilled Cheese Mini Meatball Rollups & Tomato Soup

Simek’s has so many great recipes! This is one of our favorites and is sure to be a new favorite for your family as well!

Grilled Cheese Mini Meatball Rollups

Ingredients
  • 2 Packages Simek’s Mini Beef Meatballs
  • 12 Slices White Bread
  • 12 Slices American Cheese
  • 2 T. Melted Butter
Instructions
  1. Heat Simek’s Mini Beef Meatballs in a pan until warmed all the way through.
  2. Cut crusts off of bread and roll with rolling-pin to flatten bread.
  3. Place 1 slice of American Cheese on each piece of flattened bread, followed by 4 mini meatballs aligned in center.
  4. Roll sides of bread to center to create rollup.
  5. In frying pan place butter and once melted add rollup.
  6. Heat for 5-10 minutes and turn regularly to brown all sides.

MEAL TWO:

Tuna Noodle Hotdish

Even the pickiest of eaters will love this recipe.

Tuna Noodle Hotdish
 
Ingredients
  • 6 Oz. Egg Noodles, cooked
  • 5 Oz. Tuna, drained and flaked with a fork
  • 10.5 Oz. Cream of Mushroom Soup
  • ½ Cup Milk
  • 1 Cup Frozen Peas, cooked
  • ½ Cup Finely Shredded Cheddar Cheese
  • 1 Cup Bread Crumbs
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, stir together first six ingredients until well combined.
  3. Spread into a small greased casserole dish (8”x8” approx..) then sprinkle bread crumbs evenly over the top.
  4. Bake uncovered in a preheated 350°F oven for 30 minutes and serve warm.

MEAL THREE:

Homemade Lasagna

This lasagna recipe is absolutely amazing!

Homemade Lasagna
 
Ingredients
  • 1 Lb. Ground Italian Sausage
  • 1 Onion, chopped
  • 4 Oz. Can Sliced Mushrooms
  • 24-28 Oz. Jar Spaghetti Sauce
  • 16 Oz. Container Cottage Cheese
  • 1 Pint Ricotta Cheese
  • ¼ Cup Grated Parmesan Cheese
  • 2 Eggs
  • 16 Oz. Package Lasagna Noodles
  • 2 Cups Shredded Mozzarella Cheese
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large skillet, cook and stir Italian sausage until brown.
  3. Add mushrooms and onions; saute until onions are clear.
  4. Stir in spaghetti sauce, and heat through.
  5. In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
  6. Spread a thin layer of the meat sauce in the bottom of a 9x13-inch pan.
  7. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving ½ cup mozzarella.
  8. Cover pan with aluminum foil.
  9. Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese.
  10. Bake for an additional 15 minutes.
  11. Remove from oven, and let stand 10 to 15 minutes before serving.
