Fresh Meal Planning (2/19-2/25)

Mother Nature has given us a sneak peak of warmer weather here and there reminding us that Spring is not far away! In the mean time, here’s another week filled with hot and hearty meals to keep you warm and toasty. 

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. However, if you’ve been following along with us, then this week of meal planning is sure to give you 7 meals for a family of four all for under $75! That’s an awesome amount of savings! MEAL ONE:

Personal Chicken Pot Pies

These personal pot pies are both cute and tasty!

Personal Chicken Pot Pies
 
Ingredients
  • 3 Pie Crusts
  • 10.5 Oz. Can Cream of Chicken Soup
  • 1 Cup Milk
  • 3 Cups Chunk Cooked Chicken
  • 16 Oz. Frozen Mixed Vegetables, thawed
Instructions
  1. Preheat oven to 375°F and spray a 6 cup jumbo muffin pan with non-stick cooking spray.
  2. Cut six 4" and six 6" circles out of your pie crusts. Fit the larger circles into the muffin cups.
  3. Mix the rest of the ingredients together and divide the filling amongst the 6 cups.
  4. Place the 4" pie crust on top and press to seal the edges together. Cut a few slits for ventilation.
  5. Bake for 30 minutes or until the crust is golden brown and the filling is bubbling.

Soup In Bread Bowls

Make your family’s favorite soup to serve in these yummy bread bowls.

What You’ll Need: 

  • 4-12.1 Oz. Bear Creek Soup Mix – $3.49

MEAL THREE:

Sausage Skillet Pasta

This recipe from Gold’n Plump will surely become a new favorite.

Sausage Skillet Pasta

Ingredients
  • 1 tsp Olive Oil
  • 1 Medium Onion, chopped
  • 9 Oz. (1/2 bag) Gold’n Plump Sliced Chicken Sausage - Smoked Hickory Flavor
  • 14 Oz. Chicken Broth
  • 8 Oz. Penne Pasta
  • 2 Cups Chopped Baby Spinach, packed
  • ½ Cup Grape Tomatoes, sliced in half
  • ½ Cup Shredded Parmesan Cheese
Instructions
  1. In a large skillet over medium heat, sauté onions and olive oil until tender. Add sausage slices and continue cooking 5 to 8 minutes until the onions start to lightly brown.
  2. Stir in the chicken broth and pasta, making sure the pasta is submerged. Raise the heat and bring mixture to a boil, then cover and turn heat down to medium low. Simmer 12 to 15 minutes stirring a few times during cooking time until the pasta is cooked.
  3. Turn off heat, uncover skillet. Add tomatoes and spinach, stirring to wilt the leaves. Sprinkle with shredded Parmesan, and replace lid until cheese has melted (about 5 minutes).
