MEAL ONE:

Italian Salami Sandwich And Salad

Add more of your favorite veggies like cucumbers, tomatoes or bell peppers to your Italian salad to make the perfect side for this yummy sandwich.

Fresh Meal Planning (2/12-2/18)
 
Ingredients
  • 1 Loaf Focaccia Bread
  • ½ Lb. Hard Salami
  • Mild Banana Pepper Rings
  • Red Onion, chopped
  • 8 Oz. Sliced Provolone Cheese
  • 1 Tbsp. Olive OIl
Instructions
  1. Preheat oven to 350F.
  2. Slice focaccia loaf in half, horizontally.
  3. On bottom half layer the salami followed by veggies and top with cheese slices; cover with top half of bread.
  4. Lightly brush olive oil over the top of the focaccia loaf, then wrap in tin foil, sealing up any openings.
  5. Bake until warmed through and cheese is melted.
  6. Cut into 6-8 pieces and serve hot.

MEAL TWO:

Garlic Brown Sugar Baked Chicken With Caramelized Onions

Serve this tasty recipe with some veggies and potatoes for a winning meal combination.

Garlic Brown Sugar Baked Chicken With Caramelized Onions
 
Ingredients
  • 8 Pieces of Chicken, bone in
  • 1 Large Onion, sliced
  • 4 Tbsp Butter
  • 4 Cloves Garlic
  • ¼ Cup Brown Sugar, packed
  • 1 Tbsp Honey
  • ½ tsp Dried Oregano
  • ½ tsp Dried Thyme
  • ½ tsp Dried Basil
  • Salt and Pepper to Taste
Instructions
  1. Preheat oven to 400 and lightly grease a 9x13 baking dish.
  2. In a large skillet over medium heat, melt 2 tablespoons butter. Season chicken with salt and pepper, and add to skillet.
  3. Sear chicken pieces on both sides until golden brown, 1-2 minutes per side, then set chicken in prepared baking dish, along with onion slices.
  4. Melt remaining 2 tablespoons butter in the same skillet. Add garlic and cook for 1-2 minutes.
  5. Add in brown sugar, honey, oregano, thyme, and basil and stir to combine. Pour glaze over chicken and onion, and bake in oven for 25-30 minutes.
  6. Once chicken is cooked all the way through, remove from oven and serve hot!

Ingredients
  • 1 Whole or Cut Up Chicken
  • 1 Can any kind of Beer
  • ½ tsp Garlic Powder
  • ½ tsp Basil
  • ½ tsp Paprika
  • ½ tsp Black Pepper
  • ½ tsp Kosher Salt
  • Any desired additional spices
Instructions
  1. Put all ingredients into crockpot.
  2. If frozen cook on high 4-5 hours or low 8-10 hours.
  3. If fresh cook on high 3-4 hrs or low 7-8 hours.

Cowboy Beans

Here’s a new recipe that will definitely be a winner.

Cowboy Beans
 
Ingredients
  • 1 Pkg. Smoked Sausage
  • ¼ Lb. Bacon, chopped
  • 1 Onion, chopped
  • 1 Can (15 ounces) Baked Beans
  • 1 Can (15 ounces) Kidney Beans, rinsed and drained
  • 1 Can (15.25 ounces) Lima Beans, rinsed and drained
  • ½ Cup Ketchup
  • ⅓ Cup Packed Brown Sugar
  • 2 tsp. Prepared Yellow Mustard
  • 2 tsp Cider Vinegar
  • ¼ Tsp. Salt
Instructions
  1. Cut sausage into 1” slices; set aside.
  2. Cook bacon and onion in large saucepan over medium-high heat, stirring frequently for 7-8 minutes, or until bacon is brown and onions are tender.
  3. Stir in all remaining ingredients except sausage; bring to a boil, reduce heat to medium low, cover and cook 20 minutes.
  4. Add sausage; cover and cook 10 minutes or until sausages are hot.
