Fresh Meal Planning (2/5-2/11)

Welcome back to another great week filled with new and tasty recipes that will warm up and fill up the whole family. 

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. MEAL ONE:

Balsamic Raspberry Glazed Slow Cooker Pork Tenderloin

This tasty recipe can be customized to fit your family’s taste… try it with Blackberries or Blueberries!

Balsamic Raspberry Glazed Slow cooker Pork Tenderloin
 
Ingredients
  • 1.5 Lb. Pork Tenderloin
  • 1 tsp Fresh Rosemary, chopped fine
  • ¾ tsp Salt
  • ¼ tsp Pepper
  • 1 Clove Garlic, minced
  • ½ Cup Water
  • ½ Cup Brown Sugar
  • 1 Tbsp Cornstarch
  • ¼ Cup Balsamic Raspberry Blush Vinegar
  • ½ Cup Water
  • 2 Tbsp Soy Sauce
  • 1 Cup Fresh Raspberries
Instructions
  1. In a small bowl, combine rosemary, salt pepper and garlic. Rub over tenderloin.
  2. Pour ½ cup of water in the slow cooker and add the tenderloin. Cook on low for 5-6 hours.
  3. While tenderloin is cooking, in a small pan whisk together brown sugar, cornstarch balsamic vinegar, water and soy sauce. Heat over medium and stir until mixture thickens, about 4 minutes. Add blueberries and simmer until warm, about 2 minutes.
  4. When tenderloin is done, remove from slow cooker and let rest 5 minutes. Drizzle glaze over tenderloin.
  5. Slice and serve.

MEAL TWO:

Crispy Fried Chicken

This homemade fried chicken recipe will have your family asking for seconds.

Crispy Fried Chicken
 
Ingredients
  • 1 Quart Buttermilk, divided
  • 1 Tbsp. Paprika
  • 1 Cloves Garlic, crushed
  • 1 Bay Leaves, crumbled
  • 2 Lbs. Bone-in Chicken Parts With Skin
  • ⅛ Cup Chicken Flavor Bouillon
  • 1 Cups All-Purpose Flour
  • 1 Egg
  • ½ tsp. Baking Powder
  • ¼ tsp. Baking Soda
  • Vegetable Oil for Frying
Instructions
  1. Combine 3.5 cups buttermilk, paprika, garlic and bay leaves in large bowl. Add chicken; cover and refrigerate 1 to 3 hours. Drain chicken.
  2. Combine Chicken flavor Bouillon with flour in shallow bowl. Whisk egg, baking powder and baking soda in another shallow bowl; whisk in remaining ½ cup buttermilk.
  3. Heat 2-inches oil in large wide pot to 325°.
  4. Meanwhile, dip chicken in flour mixture, then buttermilk mixture then in flour mixture again. Shake off excess flour. Place on wire rack until oil is ready.
  5. Fry chicken, in batches, covered, turning occasionally, until chicken is thoroughly cooked, about 10 minutes. Drain on paper towels.

MEAL THREE:

Pizza With Homemade Cheesy Garlic Rolls And Salad

Your family will love these homemade cheesy garlic rolls!

Ingredients
  • 1 Can Refrigerated Crescent Rolls
  • 4 Pieces Mozzarella String Cheese
  • 2 Tbsp Melted Butter
  • 1 tsp Garlic Bread Seasoning
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine melted butter and garlic bread seasoning. Set aside.
  3. Separate crescent dough into 8 rolls. Cut string cheese in half.
  4. Brush half of the butter on top of crescent rolls. Place one half of string cheese on the long end of each crescent roll. Roll up and place on baking sheet. Brush rolls with remaining butter.
  5. Bake for 15-18 minutes, until rolls are golden brown.

Cajun Sausage Pepper And Rice Skillet

Change up the norm with this Cajun style meal.

Cajun Sausage Pepper and Rice Skillet
 
Ingredients
  • 1 Package Knorr® Rice Sides™ Chicken flavor
  • 1 Box (10 oz.) Frozen Cut Green Beans, thawed
  • 1 Lb. Kielbasa, sliced
  • ⅛ tsp. Ground Red Pepper
  • 2 Medium Red and/or Green Bell Peppers, chopped
Instructions
  1. Prepare Knorr® Rice Sides™ Chicken flavor according to package directions, adding green beans during last 3 minutes of cook time.
  2. Meanwhile, cook sausage with cayenne pepper in 12-inch nonstick skillet over medium-high heat stirring occasionally, until sausage is golden, about 4 minutes. Remove sausage from skillet and set aside.
  3. Cook red pepper in same skillet over medium heat, stirring occasionally, until tender, about 3 minutes. Stir in sausage and Rice.
  4. *Use more or less according to taste.

MEAL FIVE:

Baked Herb And Garlic Chicken Drumsticks With Potatoes

Another hearty meal to fill up the family.

Baked Herb and Garlic Chicken
 
Ingredients
  • 10 Chicken Drumsticks
  • 3 Tbsp Olive Oil Extra Virgin
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1 tsp Ground Basil
  • 1 tsp Dried Sage
  • ½ tsp Onion Powder
  • ½ tsp Cayenne Pepper
  • ½ tsp Kosher Salt
  • ½ tsp Black Pepper
Instructions
  1. Preheat oven to 400°F. Grease baking sheet with 1 tbsp olive oil.
  2. Place drumsticks on greased baking sheet, leaving room between each drumstick.
  3. Coat remaining drumsticks with remaining 2 tbsp olive oil evenly.
  4. In a small bowl, mix all spices and herbs together until combined (garlic powder, onion powder, cayenne pepper, oregano, basil, sage, kosher salt and black pepper).
  5. Rub spice mixture into drumsticks evenly.
  6. Bake drumsticks for 25 minutes. Turn drumsticks over and bake for an additional 20-25 minutes, or until drumsticks reach an internal temperature of 160°F.

MEAL SIX:

Jumbo Meatball Stuffed Peppers

Try this unique and easy way to make stuffed peppers!

Jumbo Meatball Stuffed Peppers
 
Ingredients
  • 1 pkg Jumbo Italian Style Meatballs
  • 4 Large green peppers, slice in half and clean
  • 2 12oz Can Stew Tomatoes
  • Shredded Parmesan Cheese (optional)
  • 4 Cups Cooked White Rice
Instructions
  1. Slice peppers into 8 halves and wrap in aluminum foil.
  2. Bake for 15 minutes at 350F or until tender. Remove from oven, unwrap, and place in an edged pan.
  3. Add one Simek's Jumbo Italian Meatball into each half, and pour stew tomatoes over meatball, filling peppers. Bake for 20 minutes at 350F.
  4. While peppers are baking, cook white rice according to package directions. Place 1 cup of cooked white rice on each plate.
  5. Remove cooked peppers from oven and place two halves on top of cooked white rice. Top with parmesan cheese as desired.
