It’s hard to believe January is already coming to an end. Life never seems to slow down, so let us save you some time with another week of meal planning. 

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Lasagna

What You’ll Need:

What You’ll Need:

Citrus Salmon

Citrus Glazed Salmon

Serves: 4
 
Ingredients
  • ¼ Cup Orange Marmalade
  • 1 T. Lemon Juice
  • ½ tsp. Dried Basil Leaves
  • 4 – 6 oz. Salmon Fillets
  • ½ tsp. Garlic-Pepper Spice Blend
  • ¼ tsp. Salt
Instructions
  1. Preheat oven to 425°F.
  2. In a small bowl, combine marmalade, lemon juice and basil; mix well.
  3. Spray glass baking dish with cooking spray and place salmon skin side down in dish then sprinkle with garlic-pepper blend and salt.
  4. Bake salmon for 4-10 minutes.
  5. Remove from oven and brush salmon with marmalade mixture.
  6. Return to oven and continue to cook 8 additional minutes, until the internal temperature of the salmon reaches at least 145°F.

What You’ll Need:

  • 1 Lb. Fresh Norwegian Salmon – $8.99

Turkey Avocado English Muffin Sandwich & Tots

Tots pair perfectly with these english muffin sandwiches. Add bacon for even more flavor!

Turkey Avocado English Muffin Sandwich
 
Ingredients
  • English Muffins
  • Avocado
  • Sliced Turkey Breast
  • Mayo Or Miracle Whip
  • Optional Additions: Bacon, Cheese, Ranch Dressing
Instructions
  1. Lightly toast English Muffins.
  2. Add Mayo or Miracle Whip to one half of muffin.
  3. Cut avocado into ½" thick slices; add 2-4 slices to sandwich.
  4. Top with 1-2 slices or desired amount of turkey breast; top with other half of muffin.
