Another week, another great meal plan! This week is filled with some nice, hearty meals to fill you up and keep you warm on these chilly winter nights. 

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. MEAL ONE:

Chow Mein & Egg Rolls

Starting the week off right with this tasty meal!

What You’ll Need:

MEAL TWO:

Baked Chicken Breast & Sweet Baby Carrots

This sweet baby carrot recipe goes great with baked chicken. Try adding a few more of your family’s favorite veggies.

Baked Chicken Breast
 
Ingredients
  • 4 Lb. Bone-in Chicken Breasts, Thighs, Drumsticks and Wings
  • ¼ Cup Unsalted Butter at room temperature
  • 2 T. Minced Garlic
  • Salt and Pepper
  • 4 T. Olive Oil
  • 2 tsp. Tarragon, crushed (optional)
Instructions
  1. Heat oven to 450°F or 425 for convection. Prepare a baking pan with aluminum foil and a baking rack coated with cooking spray.
  2. In a small bowl, combine the butter and 1 teaspoon salt. Add garlic and tarragon. If desired, add other herbs or other flavorings to the butter. Combine.
  3. Season both sides of the chicken breasts with salt and pepper. Using your finger, carefully loosen the skin from the meat to create a sort of pocket and slide the butter underneath the skin, into it. Using your finger or the back of a spoon, carefully spread the butter evenly under the skin of each piece. Rub the skin of each piece with olive oil.
  4. Place the breasts on the rack and bake until the skin is golden brown and the meat is cooked through, 35-45 minutes. Remove from oven and let the chicken rest for 5 minutes. Serve immediately

Sweet Baby Carrots
 
Ingredients
  • 2 T. Unsalted Butter
  • 1 Lb. Baby Carrots
  • 2 T. Honey
  • 2 T. Brown Sugar, packed
Instructions
  1. Melt butter in a large skillet over medium heat.
  2. Add carrots, honey, brown sugar and gently toss to combine.
  3. Cook, stirring occasionally, until carrots are tender, about 15 minutes; serve immediately.

MEAL THREE:

Slow Cooker Pork Roast With Mushroom Rice

This slow cooker meal is both easy and delicious.

Slow Cooker Pork Roast
 
Ingredients
  • 2 – 2.5 Lb. Premium Pork Sirloin End Roast
  • kosher salt, to taste
  • ½ tsp. Garlic Powder
  • ½ tsp. Red Pepper Flakes
  • ⅓ Cup Chicken or Vegetable Broth
  • ⅓ Cup Balsamic Vinegar
  • 1 T. Worcestershire Sauce
  • 1 T. Honey
Instructions
  1. Season the pork with salt, garlic powder and red pepper flakes and place it into the slow
  2. cooker.
  3. Mix together the broth, vinegar and Worcestershire sauce and pour it over the pork, then pour the honey over and set the timer for 4 hours on High or 6-8 hours on Low.
  4. Once the pork is cooked and tender (it should shred easily with a fork), remove from slow cooker with tongs into a serving dish. Break apart lightly with two forks and put back into the slow cooker. Ladle ½ cup sauce over the pork and keep warm until ready to eat.

Mushroom Rice
 
Ingredients
  • 10.5 Oz. Condensed Beef Broth, undiluted
  • ¾ Cup Long Grain Rice, uncooked
  • 4 Oz. Sliced Mushrooms, undrained
  • ¼ Cup Butter, melted
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Salt
Instructions
  1. In a 2 quart microwave-safe dish, combine all ingredients.
  2. Cover and microwave on high for 4 minutes.
  3. Microwave at 50% power for 12 minutes.
  4. Let stand 5-10 minutes. Stir before serving.

  • 19 Oz. Bag Frozen Tortellini
  • 4 Cups Chicken Broth
  • Two 14.5 Oz. Cans Italian Diced Tomatoes
  • 8 Oz. Cream Cheese
  • 3 Cups Baby Spinach
  • 4 Oz. Sliced Mushrooms
  • *Parmesan cheese garnish optional
Instructions
  1. In a large crock-pot combine meatballs, tortellini, chicken broth, diced tomatoes, mushrooms, cream cheese, and baby spinach.
  2. Cover and set on low for 5 hours, stirring occasionally.

  • 1 Bag Gold’n Plump Sliced Chicken Sausage – Smoked Hickory Flavor
  • 8 Eggs, beaten
  • 2 Cups Shredded Cheddar Cheese
  • 8 Flour Tortillas
  • 1 Jar Salsa
Instructions
  1. Heat non-stick skillet over medium heat.
  2. Spray lightly with non-stick oil and add sausage slices. Sauté until lightly browned and heated through. Add eggs and stir until cooked through.
  3. Place egg and sausage mixture on tortillas and top with cheese and salsa if desired.
  4. Fold into burritos and serve hot.
  5. Tips: Add chopped avocado, chopped green onion and sour cream for more flavor.

Crispy Pan Roasted Chicken

Another great chicken recipe to end the week with.

Weekly Meal Planning (1/22 – 1/28)

Ingredients
  • 4 Lb. Bone-in Chicken Breasts, Thighs, Drumsticks and Wings
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • 2 T. Coconut Oil
Instructions
  1. Preheat oven to 425 degrees.
  2. Lay out chicken thighs and trim off any extra skin. Cover the skin of the chicken with a desired amount of kosher salt and black pepper.
  3. In a large (oven safe!) skillet set over medium heat add coconut oil. Let the oil melt and get hot. Once the oil is hot add chicken into the skillet, skin side down. The oil needs to be hot enough so that when you place the chicken into the oil it sizzles.
  4. Let the chicken cook for 10 minutes. After 10 minutes place the chicken in the oven for another 5 minutes. After 5 minutes flip the chicken and cook for another 10-12 minutes or until the chicken is fully cooked to an internal temperature of at least 165°F.
  5. Remove the chicken from the oven and let it rest for a few minutes before serving.
