Fresh Meal Planning (1/15-1/21)

MEAL ONE:

Crunchy Chicken

This chicken has just the right amount of crunch.

Crunchy Chicken
 
Ingredients
  • 4 boneless skinless chicken breasts
  • 1 box Stovetop Stuffing Mix, flavor of your choice (I use Chicken)
  • 10 ounce can cream of chicken soup
  • ½ cup milk
Instructions
  1. Place stuffing mix in large zipper seal bag and crush with a rolling pin or meat tenderizer (or your hands).
  2. In bowl or measuring cup, stir together soup and milk until well blended. Pour stuffing mix crumbs in one bowl and soup mixture into another.
  3. Dip each chicken breast, on both sides, first into soup mixture and then into crumbs. Place on greased baking sheet.
  4. Bake at 400 for 20-30 minutes, or until chicken is lightly browned and no longer pink in the center.

MEAL FIVE:

Ramen Noodle Chicken Stir Fry

This tasty recipe can easily be adjusted to suit your family’s taste!

Ramen Noodle Chicken Stir Fry
 
Ingredients
Sauce
  • ½ Cup Crunchy Peanut Butter
  • 2 Tbsp Soy Sauce
  • 1 tsp White Sugar
  • 2 Drops Hot Pepper Sauce
  • 1 Clove Garlic, minced
  • ½ Cup Water
Stir Fry
  • 2 Tbsp Olive or Peanut Oil
  • 1 Large Boneless Chicken Breast, cubed
  • 1 (3oz.) Package Ramen Noodles
  • ¾ Cup Red Bell Pepper, diced
  • ¾ Cup Yellow Onion, diced
  • 1 Cup Baby Carrots, sliced in half
  • 2 Cups Broccoli Florets
Instructions
  1. Combine all ingredients for the peanut sauce. Take half of the sauce to marinade the chicken in, and set the rest aside. If you can only marinade the chicken for a few minutes, that’s completely okay.
  2. Place the marinated chicken in a small frying pan over medium heat and sauté for about 10-15 minutes, or until cooked through.
  3. Meanwhile, cook the Ramen Noodles for no more than 1.5 - 2 minutes, (toss away the flavor packet). Drain, return to the pot and coat with the peanut sauce you set aside.
  4. In a large frying pan, heat the peanut oil and vegetables over medium heat for about 10 minutes. Stir in the chicken and Ramen noodles and continue to cook until the vegetables are tender. Serve and enjoy!

Sweet Garlic Chicken

This simple chicken recipe is so delicious the whole family is sure to love it.

Sweet Garlic Chicken
 
Ingredients
  • 4 Chicken Breasts
  • 1 tsp. each Salt & Pepper
  • 4 T. Olive Oil + more for drizzling
  • 4 Cloves Garlic, minced
  • 4 T. Brown Sugar
Instructions
  1. Preheat oven to 450˚ F. Place chicken breasts in baking dish. *Tip use nonstick foil for easy cleanup. Drizzle lightly with olive oil and sprinkle both sides with salt and pepper.
  2. In a saucepan, heat 4 T. olive oil over medium heat. Add minced garlic to heated oil. Cook until softened, about 2 minutes. Turn off the heat and add the brown sugar. Stirring until combined.
  3. Spread the brown sugar mixture evenly over each piece of the side that is facing up. When oven is heated, bake chicken for 15-20 minutes. Make sure chicken has an internal temperate of 165°F. Remove and serve.
