Life would be boring without a bit of variety and we think dinner would be too! Luckily, we have a great variety in store for you this week meal planners!

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. MEAL ONE:

Crock Pot Pork Loin With Veggies 

Meal Plan Day 1

Crock Pot meals are so easy! This Pork Loin comes out so tender and juicy making it one of our favorites.

Crock Pot Pork Loin with Veggies
 
Ingredients
  • 3 Lb. Pork Loin
  • 1½ Lbs. Baby Potatoes
  • 1 Lb. Baby Carrots
  • 1 Large Red Onion, peeled and cut into large chunks
  • 4 Garlic Cloves, minced
  • ½ Cup Musselman’s Apple Butter
  • ⅓ Cup Dijon Mustard
  • ⅓ Cup Low-Sodium Soy Sauce
  • 1 Cup Beef Broth
  • Salt and Pepper
Instructions
  1. Place large nonstick skillet over medium-high heat. Once hot, season pork loin with salt and pepper and lay it in skillet.
  2. Sear pork loin on all sides to seal in juices, about 8-10 minutes. (If using a regular skillet, add 1 tablespoon oil.)
  3. Cover the bottom of a large 6 quart crock pot with chopped onions, baby potatoes and carrots.
  4. Place seared pork loin over top and surround with remaining vegetables.
  5. In small bowl, whisk minced garlic, apple butter, dijon mustard, soy sauce and broth together; pour mixture over pork
  6. and vegetables.
  7. Cover crock pot and cook on low for 8-10 hours, or high for 4-6 hours.
  8. Serve hot.

What You’ll Need:

Stuffed Chicken Breast and Baby Red Potatoes

Meal Plan Day 4

This stuffed chicken is so yummy! And the red potatoes go perfectly with it too!

Stuffed Chicken Breast and Baby Red Potatoes
 
Ingredients
  • 4 Chicken Breasts
  • Spinach Dip
  • 2-3 Tbsp Butter
  • Salt and Pepper
  • Red Baby Potatoes
  • Olive Oil
  • Parsley
Instructions
  1. Preheat the oven to 425° F.
  2. Cut chicken breasts in the middle horizontally, do not cut all the way through. Stuff about ¼ of the Spinach dip into each breast.
  3. Put chicken on a rimmed baking sheet and rub butter over the top. Season each breast with salt and pepper.
  4. Cut pre-washed baby potatoes into halves or fourths; arrange around chicken breasts on baking sheet.
  5. Brush potatoes with olive oil and season with salt, pepper and parsley.
  6. Roast the chicken breasts and potatoes in the center of the oven until chicken is cooked through, about 35 to 40 minutes.
  7. An instant-read thermometer should register 165°F when inserted into the thickest part of the meat. Remove from the oven to a serving platter. Let stand 10 minutes before serving.

  • 1 Box Kraft Macaroni and Cheese
  • ½ Lb. Lean Ground Beef
  • 1 Package Taco Seasoning
Instructions
  1. Prepare macaroni and cheese according to directions.
  2. Meanwhile, brown ground beef; drain grease.
  3. Prepare taco meat according to directions on seasoning packet.
  4. Combine taco meat with macaroni and cheese; serve hot.

What You’ll Need:

Shredded chicken in the crock pot is so easy to make and the results taste amazing!

  • 20 Oz. Boneless Skinless Chicken Breast
  • 1 Jar Barbecue Sauce
Instructions
  1. Place chicken in slow cooker, pour jar of barbecue sauce over top of the chicken.
  2. Cook on high for 4 hours or low for 8 hours.
  3. When internal temperature of chicken reaches 165°F shred with fork and serve over bread or
  4. buns.
