It’s hard to believe December is already here… Make the most of the last weeks of the year by saving time and money with more great meal plans.

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. MEAL ONE:

Creamy Bruschetta Chicken

Meal Plan Day 1

Creamy Bruschetta Chicken

Serves: 4
 
Ingredients
  • 1 Tbsp. Olive Oil
  • 1 Lb. Boneless, Skinless Chicken Breasts, sliced
  • 1 Clove Garlic, chopped
  • 1 Package Knorr® Rice Sides™ - Creamy Chicken Flavor
  • 2 Large Tomatoes, seeded and chopped (about 2 cups)
  • ½ Cup Shredded Mozzarella Cheese
  • 2 Tbsp. Chopped Fresh Basil Leaves
Instructions
  1. Heat oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes, adding garlic during the last 30 seconds of cook time. Remove and set aside.
  2. Prepare Knorr® Rice Sides™ Creamy Chicken flavor in same skillet according to package directions.
  3. Stir in chicken and tomatoes.
  4. Sprinkle with mozzarella and basil.
Notes
Tip: Serve with a drizzle of balsamic vinegar.

MEAL TWO:

Roasted Chicken

Meal Plan Day 2

This recipe creates such a tender, juicy chicken, you’ll be amazed at how easy it is to make!

Roasted Chicken
 
Ingredients
  • 3.5 - 4.5 Lb. Whole Chicken, neck and giblets removed
  • 1 Lemon, cut in half
  • 1 Head of Garlic, cut in half
  • 6 Tbsp Butter
  • 1½ tsp Salt
  • 1 tsp Fresh Thyme, Rosemary, Parsley or Sage (or whatever herbs you have on hand)
  • 2 tsp Lemon Pepper Seasoning
Instructions
  1. Position a rack in the lower third of the oven and preheat the oven to 425ºF.
  2. Place chicken on a cutting board and pat it dry using paper towels.
  3. Season the inside of cavity with ½ teaspoon of salt.
  4. Place lemon halves, garlic head, and herbs inside cavity.
  5. Place chicken breast-side up in a large cast-iron skillet or a frying pan.
  6. Melt butter in microwave, add 1 teaspoon of salt and using a pastry brush, brush half the butter generously all over the chicken, save remaining butter.
  7. Sprinkle with thyme leaves and lemon pepper seasoning.
  8. Roast chicken for 20 minutes, remove from oven, brush on remaining butter mixture.
  9. Place chicken back into oven and continue roasting for 25 minutes.
  10. Insert a thermometer into thickest part of thigh and check to make sure it registers at 165ºF.
  11. Continue to roast for an additional 10-15 minutes if necessary.
  12. Remove roasted chicken from oven and allow for it to rest for 15 minutes before carving.

Buffalo Chicken and Rice Skillet

Ingredients
  • 1 Tbsp. Butter
  • 1 Lb. Boneless, Skinless Chicken Breasts, cut into bite-size pieces
  • 1 Package Knorr® Rice Sides™ - Chicken Flavor
  • 1 Cup Chopped Carrots
  • 1 Cup Chopped Celery
  • 2 Tbsp. Cayenne Hot Sauce, or more to taste
  • 2 Tbsp. Crumbled Blue Cheese
Instructions
  1. Melt Spread in large nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked, about 5 minutes. Remove chicken and set aside.
  2. Add 2 cups water, Knorr® Rice Sides™ Chicken flavor, carrots and celery to same skillet and prepare according to package directions.
  3. Stir in chicken and hot sauce.
  4. Serve sprinkled with blue cheese and, if desired, additional chopped celery.

Creamy Mushroom Risotto

Ingredients
  • 2 Tbsp. Butter
  • 1 Small Onion, finely chopped
  • 1 Clove Garlic, finely chopped
  • 3 Cups Sliced Assorted Fresh Mushrooms
  • 2 Tbsp. Dry White Wine or Chicken Broth (optional)
  • 1½ Cups Water
  • ½ Cup 2% Milk
  • 1 Package Knorr® Rice Sides™ Herb & Butter
  • ¼ Cup Shredded Parmesan Cheese
  • 1 Tbsp. Thinly Sliced Fresh Basil Leaves
Instructions
  1. Melt butter in large nonstick skillet over medium heat and cook onion with garlic, stirring occasionally, until onion is transluent, about 2 minutes.
  2. Stir in mushrooms and season, if desired, with salt and ground black pepper.
  3. Cook, stirring occasionally, until mushrooms are tender, about 2 minutes.
  4. Stir in wine and cook until all liquid is almost evaporated.
  5. Add water and milk and bring to a boil over high heat.
  6. Stir in Knorr® Rice Sides™ Herb & Butter and reduce heat to medium-low.
  7. Cook covered 7 minutes or until rice is tender.
  8. Remove from heat.
  9. Stir in cheese and basil.
  10. Transfer to serving dish and garnish, if desired, with additional Parmesan cheese.
