Chicken Broccoli Pasta

Meal Plan Day 4

This recipe is sure to be a hit. Try it with your family’s favorite vegetables.

Chicken Broccoli Penne
 
Ingredients
  • 1 Lb. Whole Wheat Penne Pasta, uncooked
  • 2 T. Extra-Virgin Olive Oil
  • 1 T. Unsalted Butter
  • 1 Clove Fresh Garlic, finely minced
  • 1 Medium Yellow or Sweet Onion, minced
  • 18 Oz. Gold’n Plump Fully Cooked Sliced Chicken Sausage
  • 12 Oz. Frozen Broccoli, chopped into bite-sized pieces
  • 3 Oz. Parmesan Cheese, finely grated, plus more for serving
  • Kosher Salt and Freshly-Ground Black Pepper, to taste
Instructions
  1. Bring a large pot of salted water to a boil. Cook the pasta al dente, according to package directions (about 11 minutes).
  2. Meanwhile, heat the olive oil and butter in a large skillet over medium-heat, until the butter is melted and the oil just begins to shimmer. Add the garlic and onion, and cook, stirring occasionally, until just softened, about 2 minutes.
  3. Add the chopped sausage to the skillet, and cook, stirring occasionally, until heated through, about 5 minutes.
  4. During the last two minutes of cooking, add the chopped broccoli to the pasta pot. Drain, reserving about ¼ cup of pasta water.
  5. Add the drained pasta, broccoli, and reserved pasta water to the skillet with the sausage. Stir to combine. Add the Parmesan, and season with salt and pepper, to taste. Serve warm with an extra dusting of Parmesan. Enjoy!

Ground Philly Cheesesteak Grilled Cheese Sandwich

Meal Plan Day 6

Change up the traditional with this twist on a Philly Cheesesteak.

Ground Philly Cheesesteak Grilled Cheese
Serves: 4
 
Ingredients
  • 1 Lb. Ground Beef
  • Salt & Pepper To Taste
  • 1 Tbsp Worcestershire Sauce
  • 6 Tbsp Butter
  • 1 Onion, chopped
  • ½ Green Bell Pepper, chopped
  • 8 Slices American or Provolone Cheese
  • 8 Slices White Bread
Instructions
  1. Brown beef in skillet, leaving bigger pieces.
  2. Add salt, pepper and Worcestershire sauce; Stir gently, then remove from pan.
  3. Melt 2 tbsp. butter in pan; add onions and pepper, cooking until browned and caramelized.
  4. Add salt and pepper to taste.
  5. Once browned, add meat back in and combine together.
  6. Spread butter on one side of each slice of bread; place butter side down on a cutting board.
  7. Add a slice of provolone to each slice of bread.
  8. Top four bread slices with meat mixture and close sandwiches.
  9. In a cast iron pan or griddle on medium high add sandwiches and cook for 3-5 minutes on each side.
  10. Serve hot.
