Somehow… Miraculously… It is already almost October! Fall is trucking along and it’s time for a fun meal planning blog that will kick your week off nicely.

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. However, if you’ve been following along with us, then this week of meal planning is sure to give you 7 meals for a family of four all for under $75! That’s an awesome amount of savings! MEAL ONE: 

Loaded Baked Potato Chicken Casserole

Loaded Baked Potato Chicken Casserole

Serves: 6-8
 
Ingredients
  • 1 Lb. Chicken Breasts
  • 6-7 Medium Red Potatoes
  • 1⁄4 Cup Olive Oil
  • ¾ tsp. Salt
  • 1⁄2 T. Fresh Ground Pepper
  • 1⁄2 T. Paprika
  • 1 T. Garlic Powder
  • 1½ T. Hot Sauce
  • 1 Cup Cheddar Cheese, shredded
  • 1⁄2 Cup Bacon, crumbled
  • 1⁄2 Cup Green Onion, diced
Instructions
  1. Preheat oven to 400 degrees.
  2. In liquid measuring cup mix olive oil, salt, pepper, paprika, garlic powder and hot sauce.
  3. Wash and cube potatoes.
  4. Add liquid mixture to potatoes in a large bowl and allow to marinate for 10 minutes, while cutting chicken.
  5. Cube chicken.
  6. Add chicken to potatoes and mix well.
  7. Coat 9x13 glass baking dish with cooking spray.
  8. Spread potatoes and chicken evenly in baking dish and bake for 60 minutes, stirring every 20 minutes.
  9. Meanwhile, fry bacon and set aside to drain.
  10. Chop green onions.
  11. Crumble bacon.
  12. Once potatoes and chicken are done, layer cheese, bacon, and green onions on top and bake 5 additional minutes until cheese is melted.

This first meal is an absolute win. It’s for all the casserole lovers out there… Especially those who love bacon, cheese and potatoes. All the good stuff!

What You’ll Need:

MEAL THREE: 

Blue Cheese Stuffed Chicken Breast

This recipe is tasty and creative without taking too much effort. Enjoy this stuff blue cheese chicken recipe with some tasty bacon!

Blue Cheese Stuffed Chicken Breast
 
Ingredients
  • 8 Oz. Butter, at room temperature
  • 4 Oz. Blue Cheese, crumbled
  • 4 Slices Smoked Bacon, cooked until crisp and finely chopped
  • 2 tsp. Chopped Fresh Chives
  • 4 Chicken Breasts
  • Pepper, to taste
Instructions
  1. In a large bowl, using a rubber spatula, mix the butter, blue cheese, bacon, and chives together until combined.
  2. Dollop half of the compound butter along the long edge of a 12-inch piece of parchment or waxed paper.
  3. Roll into a log, twisting opposite ways on both ends of the paper to create a tightly wrapped log of butter.
  4. Refrigerate or freeze for another use.
  5. Preheat the oven to 425° F.
  6. Cut chicken breasts in the middle horizontally, do not cut all the way through.
  7. Stuff about ¼ of the blue cheese butter into each breast.
  8. Put the chicken on a rimmed baking sheet and rub any remaining butter over the skin.
  9. Season each breast with just a pinch of freshly ground black pepper.
  10. Roast the chicken breasts, in the center of the oven until skin is crisped and chicken is cooked through, about 35 to 40 minutes.
  11. An instant-read thermometer should register 165°F when inserted into the thickest part of the meat.
  12. Remove from the oven to a serving platter.
  13. Let stand 10 minutes before serving.
