Welcome back! September is well under way and the routine of back-to-school is getting a little bit easier. Keep that simplicity streak going with some planned out dinners brought to you by the Fresh Meal Planning Blog!

While following along with this week’s meal planning blog, please keep in mind that your grocery list may vary slightly from ours depending on what you need for this week’s meals or what you do not already have on hand that we do from previously meal planning creations, as well as diet restrictions or alterations to our recipes. Reminder that we also calculate the average prices for items based on the weekly ad for all locations or with prices averaged out from CobornsDelivers.com. MEAL ONE: 

German Potato & Cabbage Bake

Fresh Meal #1

Here’s a feel-good recipe for all the cabbage lovers out there! Enjoy this meal on a crisp fall evening and you’ll even have leftovers for tomorrow evening’s Meal #2!

German Potato & Cabbage Bake
 
Ingredients
  • 1 Pkg. Shore Lunch Creamy Potato Soup
  • 1 Lb. Smoked Kielbasa, cut into ½ inch pieces
  • 1 Lb. Green Cabbage, cut into 2-3 inch wedges
  • 1 Lb. Fuji Apples, cored, peeled, and thinly sliced
  • 5 Cups Hot Water
  • 1½ Cups Swiss Cheese
Instructions
  1. Preheat the oven to 350 ºF.
  2. Grease a 13” x 9” baking dish.
  3. Add the soup and hot water into a large mixing bowl and whisk to combine.
  4. Add the kielbasa, cabbage, and apples to the casserole dish.
  5. Pour the soup into the casserole dish and cover with aluminum foil.
  6. Place the dish directly into the oven and bake covered for 20 minutes.
  7. Carefully remove the foil and bake for an additional 20 minutes.
  8. Sprinkle the casserole with Swiss cheese and bake for 5 minutes.
  9. Carefully remove the casserole from the oven and let rest for 5 minutes before serving.

Hearty Chicken & Rice Soup

Homemade soup? Why didn’t you say so! Rest easy – the week is almost over!

Hearty Chicken & Rice Soup
 
Ingredients
  • 1 Pkg. Shore Lunch Chicken Noodle Soup
  • 4 T. Butter
  • ¼ Cup Vegetable Oil
  • 1 Yellow Onion, diced
  • 1 Cup Brown Rice
  • 3 Cups Grilled & Ready Chicken, cut up
  • 5 Cups Water
Instructions
  1. Add the butter and vegetable oil to a large stockpot over medium high heat. Add the onions and cook for 3-4 minutes. Add the rice and cook for 2-3 minutes, stirring constantly.
  2. Add the soup and water to the pot, stir to combine and bring to a boil, reduce the heat and simmer for 20 minutes. Stir occasionally. Add the chicken to the pot and cook for 5 minutes.
  3. Serve immediately.

MEAL SEVEN: 

Horseradish-Mustard Salmon

Indulge in tonight’s dinner, it’s a good one! This meal uses 3/4 Lb. of Fresh Salmon for a dinner for two (date night!) and 1.5 Lbs. for a dinner for four. If you are making this meal for four then simply double all your other ingredients and follow the same steps. This salmon served on a bed of quinoa is a perfect way to say “Sayonara” to the week! (This recipe can be found in our Fall 2016 CelebrateMore magazine or online at the E-Magazine at CelebrateMore.net!)

Horseradish-Mustard Salmon

Ingredients
  • 1 Pkg. Quinoa Blend
  • 2 tsp. Olive Oil
  • ¼ Cup Sliced Almonds
  • 1 T. Horseradish
  • 1 T. Dijon Mustard
  • 1 tsp. Fresh Lemon
  • ½ tsp. Tarragon
  • ¼ tsp. Salt
  • ¼ tsp. Ground Black Pepper
  • 1.5 Lb. Fresh Salmon Fillet, cut into 4 equal pieces
Instructions
  1. In a small saucepan, prepare quinoa blend as label directions with 1 tsp. olive oil; stir in almonds.
  2. Meanwhile, in a small bowl, stir horseradish, mustard, lemon juice, tarragon, salt and pepper until well blended.
  3. Heat remaining 2 tsp. oil in large skillet over medium-high heat.
  4. Add salmon, skin side up; cook 5-6 minutes or until golden brown on bottom.
  5. Turn salmon and cook 4-5 minutes or until internal temperature reaches 145 degrees F.
  6. Spread horseradish-mustard sauce over salmon pieces during last 3 minutes of cooking.
  7. Slide spatula between skin and salmon to remove skin.
  8. Serve salmon over quinoa blend drizzled with remaining horseradish-mustard sauce; garnish with lemon slices.
