Grilled Eggplant Cheesy Lasagna Stacks

Grilled Eggplant Lasagna Stacks
  • 1 Lb. Eggplant
  • Salt, to taste
  • 2 Cups Marinara Sauce
  • 8 Oz. BelGioioso Fresh Mozzarella (8 Oz. Ball), sliced
  • 1 Cup BelGioioso Ricotta con Latte
  • 2 T. Shredded BelGioioso Parmesan
Fresh basil, to taste and chopped
  1. Slice eggplant, about ¼ inch thick, salt and let sit for one hour to draw out the water.
  2. Pat dry.
  3. Heat a Teflon-coated grill pan or use a grill to heat each slice of eggplant until browned on each side.
  4. For each “lasagna” stack, spread one grilled eggplant slice with marinara sauce and top with a slice of Fresh Mozzarella.
  5. Add another eggplant slice and top with Ricotta con Latte.
  6. Garnish with marinara sauce, sprinkle with Parmesan, and broil to heat and melt cheese

Pearls Flatbread Salad

  • 5 Oz. Mixed Baby Salad Greens
  • ⅔ Cup Mixed Fresh Herbs (basil, mint, parsley, tarragon), chopped
  • ⅔ Cup Green Onions, thinly sliced
  • 2 tsp. Fresh Lemon Juice
  • 1 tsp. Dijon Mustard
  • 2 T. Extra Virgin Olive Oil
  • Kosher Salt and Black Pepper
  • 12 Oz. Prepared Grilled Flatbread
  • Oven-Roasted Tomatoes, slivered
  • 8 Oz. BelGioioso Fresh Mozzarella Pearls Cheese
  1. Combine salad greens, chopped herbs and green onions; set aside.
  2. For dressing, combine lemon juice, mustard and olive oil.
  3. Toss salad mixture with dressing.
  4. Season salad with kosher salt and black pepper.
  5. For each serving, cut one grilled flatbread into quarters.
  6. Plate the pieces, spoke-fashion, leaving plate center clear.
  7. Add 1 cup salad to center of plate.
  8. Top with slivered oven-roasted tomatoes and BelGioioso Fresh Mozzarella Pearls.
