I just have to share my new discovery with all of you. This is just the best! We decided to have a backyard party and served tacos a few weeks ago. The day was perfect and could not have planned the weather better. I decided that I would put a bowl of fresh salsa and chips at each table for our guests. WOW! I never dreamed that the salsa would be the hit of the party. What I did for this recipe is to add a fresh peach but you can substitute the peach for pineapple or mangos. All 3 types of fruit taste great in this recipe. Since that party I have made the salsa several times and have added fresh avocado also. Is that ever yummy! Just a couple quick tips for you, always remember to rinse those black beans and make sure to wear gloves when chopping the fresh jalapeno pepper. When I made this recipe for the blog I made a double batch because once you taste this recipe one batch will never be enough. So if you are planning an event or just want to sit back, relax and have a couple of margaritas, just make sure to add this to the menu. You won’t be able to stop at a couple of bites. - 4 Medium Tomatoes, chopped
- 1 Medium Fresh Peach, chopped
- 1 Fresh Avocado, peeled & chopped, optional
- 1 Can Corn, drained
- 1 Can Black Beans, drained and rinsed
- ¼ Cup Red Onion, chopped
- 1 Jalapeno Pepper, seeded and chopped
- ½ Cup Fresh Cilantro, minced
- 3-T. Lime Juice
- 1-T. Olive oil
- 2 Garlic Cloves, minced
- ¼-tsp. Salt
- Tortilla Chips
- In a large bowl, combine the first 12 ingredients.
- Chill until serving.
- Serve with tortilla chips.
