This recipe is super-simple and I “wowed” them at our office potluck. You can also use Ramen noodles broken up into small pieces instead of cashews and it still tastes great!!! To give this an extra splash of flavor I have also added cooked shredded chicken or pork when I have leftovers from the night before.
5 Cups Cole Slaw
1 Red Pepper, cut into thin strips
1 Carrot, shredded
1/2 Cup Cashew Halves, coarsely chopped
1/2 Cup Red Onion, thinly sliced
3 T Fresh Cilantro, chopped
1/3 Cup Light Salad Dressing
1 T Fresh Lime Juice
Combine first six ingredients in large bowl. Mix salad dressing and lime juice. Add to cole slaw mixture; toss to coat. Makes 8 Servings
