This is a great recipe for grilling fish and extremely easy to do. To avoid some of the butter I have used the butter spray instead and it works just as well. This is a great flavor and you can always add a variety of seasonings to this recipe if you like. I have also added a slice of fresh lemon for extra flavor.
8 - 4 Oz. Walleye Fillets
1/4 Cup Butter
1/4 Cup Lemon Juice
To Taste Salt & Pepper
1 Large Onion, sliced into rings
Preheat grill for medium-high heat and lightly oil the grate. Place 2 fillets onto the center of a sheet of heavy-duty aluminum foil. Drizzle with butter and lemon juice, season with salt and pepper, and place some of the onion rings over the top. Bring the sides of the aluminum foil over the fish and fold several times. Roll up the ends, making the pouch airtight. Repeat with remaining ingredients. Place the pouches onto the grill and cook until the internal temperature of the fish reaches 145°F.

For me, there is nothing more of local favorite than fresh walleye. Why not pair it with some local wine? Hill City, South Dakota’s Prairie Berry Calamity Jane or Chisago City, Minnesota’s Winehaven Raspberry would be great choices. Both are refreshing and in a sweeter style and are great choices to pair with walleye.
