Wow! This is a huge hit at my house. Great recipe to serve if you are entertaining a group of people. I have also substituted the shrimp with chicken and I have used all different varieties of pasta with this recipe and it is awesome!! Serve a mixed green salad or fresh fruit on the side and it is a perfect meal.
2 Cups Penne Pasta, uncooked
1.5 Lbs. Medium Shrimp, uncooked, deveined, peeled
1/2 Cup Chicken Broth
6 Oz. Cream Cheese, cubed
1 T Lemon Juice
1/4 Cup Grated Parmesan Cheese
1/2 Cup Mozzarella Cheese, shredded
1 T Fresh Parsley, chopped (optional)
Cook pasta in large saucepan, adding shrimp to the boiling water for the last 3 minutes. Meanwhile, heat broth in large skillet on medium heat. Add cream cheese and lemon juice; cook and stir 3-4 minutes or until cream cheese is melted. Drain pasta mixture. Add to cream cheese sauce in skillet with Parmesan; mix well. Top with mozzarella; cover. Cook 3-4 minutes or until mozzarella is melted. Sprinkle with parsley.

Suggested Wine pairing
Massimo Sauvignon Blanc
This recipe screams for a Sauvignon Blanc pairing! The refreshment and acidity that Sauvignon Blanc delivers is great at cutting through the creamy nature of this dish and pairs beautifully with the lemon. This pairing is a perfect example of the food and wine complimenting each other and makes them both better.
