Wow! This is a huge hit at my house. Great recipe to serve if you are entertaining a group of people. I have also substituted the shrimp with chicken and I have used all different varieties of pasta with this recipe and it is awesome!! Serve a mixed green salad or fresh fruit on the side and it is a perfect meal.
Ingredients
2 Cups Penne Pasta, uncooked
1.5 Lbs. Medium Shrimp, uncooked, deveined, peeled
1/2 Cup Chicken Broth
6 Oz. Cream Cheese, cubed
1 T Lemon Juice
1/4 Cup Grated Parmesan Cheese
1/2 Cup Mozzarella Cheese, shredded
1 T Fresh Parsley, chopped (optional)
Directions
Cook pasta in large saucepan, adding shrimp to the boiling water for the last 3 minutes. Meanwhile, heat broth in large skillet on medium heat. Add cream cheese and lemon juice; cook and stir 3-4 minutes or until cream cheese is melted. Drain pasta mixture. Add to cream cheese sauce in skillet with Parmesan; mix well. Top with mozzarella; cover. Cook 3-4 minutes or until mozzarella is melted. Sprinkle with parsley.
