I have made this recipe several times and it is a great combination of flavors. When watermelon is not in season I have tried strawberries instead and I have also added a couple of tablespoons of fresh mint to the salad for extra flavor and they are both wonderful!
Ingredients
1 Pkg. Baby Spinach Leaves
1/2 Lb. Large Shrimp, cooked, peeled, deveined, tail removed
2 Cups Watermelon, chopped
1/2 Cup Feta Cheese, crumbled
1/2 Cup Red Onions, sliced
1/4 Cup Slivered Almonds, optional
1/3 Cup Balsamic Vinaigrette Dressing
1/2 Cup Croutons, optional
Directions
Combine all ingredients except dressing and croutons in large bowl.
Add dressing; toss to coat. Sprinkle croutons on top if desired.
